Ataulfo mangoes are only available in the Toronto area from late March until September. I don't know what the availability is in other regions. They are 8 to 10 inches long with an oblong round-bottom shape and a gold-blushed yellow skin. The juicy flesh inside is yellowy-orange, creamy smooth, free of fibrous stringiness (which can set off allergies in people sensitive to stone fruits) and is described as the best thing to have fallen out of a tree since the apple observed by Isaac Newton. The flavour resembles a delectable combination of peach, banana,m pineapple and butter. They're incredibly sweet and loaded with vitamin c and dietary fibre. Look for them in your local Chinatown. Number Of Ingredients 4

2 ataulfo mangoes, peeled
1/2 cup white wine or 1/2 cup water
1/4 vanilla pod
1/4 cup granulated sugar

Steps:

  • Place all ingredients in a small saucepan.
  • Simmer over low heat until liquid is almost evaporated (about 45 minutes).
  • Remove vanilla and puree in food processor.

These delicious cookies taste like eating Mango Cobbler! Perfect dessert when mangos are in season and available.

Number Of Ingredients 8

3 cups UNBLEACHED all-purpose flour ((bleached flour toughens baked goods) )
1 cup sugar
2 5.3-oz. containers Chobani Mango Greek Yogurt
1 cup mangos (finely diced (I used ataulfo mangos) )
6 tbsp. unsalted butter (melted)
1 tbsp. vanilla extract
1 tsp. baking soda
1/2 tsp. sea salt

Steps:

  • Melt butter.
  • Stir Greek yogurt and then add to butter with sugar, vanilla, baking soda and salt and whisk until well combined.
  • Add flour and mangos and stir with a wooden spoon to combine.
  • Scoop out dough with an ice cream scoop and place on greased cookie sheets.
  • Bake at 350° for about 18-20 minutes or until done.
  • Rotate cookies on racks every six minutes while baking.

May 04, 2017 · To dehydrate it, wash well and then peel the mango. Slice. I slice them like shown and sometimes I just cut it into chunks. I find they dehydrate better like this though. Place on your dehydrator trays and dehydrate at 135 degrees for 12-14 hours. Store in sealed mason jars. I also dehydrate limes and mix up Chicken and Rice Soup Mix-in-a-jar .
