ASPARAGUS SPEARS-APPETIZER/HORS D'OEUVRES RECIPE - FOOD.COM
Can be a bit messy to make, but well worth the effort. Never have made these and not wished I had more to serve. They really do go quickly

Steps:
- Cut bacon in half strips.
- Fry in a pan until just beneath Crisp Not to limp.
- Lay on paper towels to degrease the Bacon.
- Cut Asparagus into 5/6 inch lengths. Pick thin Stems not thick. Steam the Asparagus in a Steamer until Tender.
- Cut cheese into thin strips about 5x1/2 inches long.
- Melt Butter.
- White bread. Cut off the crust, and roll out thinly with a rolling pin.
- Lay Asparagus, bacon and cheese on a diagonal into the bread.
- Roll the bread upward and seal with butter.
- spread Butter on top so to brown.
- Put into Broiler until Bread is Browned.
- Serve.

My sister Christine made these for use when I went home to Michigan for a visit for mom's 92nd birthday. These are so good and very easy to make..Made them this week, when my daughter came for a visit with her boyfriend..they were a hit again..Thanks Chris for the recipe!

Steps:
- Blend blue cheese, cream cheese and egg until very smooth. Trim crust from bread(must do).Flatten each slice of crust-less bread with a rolling pin, then spread each piece with the cheese mixture.
- Place one asparagus spear on the bottom of each slice of bread(cut to fit on bread and add together on bread) and roll up. Place the rolls on a freezer safe pan or plate(not touching each other)- then place in the freezer to firm up; so as to cut easier. This will also prevent cheese mixture from gushing out while slicing and baking.
- Heat oven to 400^. Remove rolls from the freezer, cut each roll in half or thirds.(these can be made ahead, frozen and placed in freezer bags for future use). When ready to bake, place the rolls on a baking sheet and brush very generously with the melted butter. Bake for 20-25 minutes until lightly browned and crunchy.Serve at once.

- Preheat oven to 400°. In a large skillet, bring 1 in. of water to a boil; add asparagus. Cook, covered, until crisp-tender, 3-5 minutes. Drain and pat dry., On a lightly floured surface, roll pastry sheet into a 16x12-in. rectangle. Transfer to a parchment-lined large baking sheet. Bake until golden brown, about 10 minutes., Sprinkle 1-1/2 cups cheese over pastry to within 1/2-in. of edges. Place asparagus over top; sprinkle with remaining cheese. Mix remaining ingredients; drizzle over top. Bake until cheese is melted, 10-15 minutes. Serve warm.

I don't really know what these are called, officially, but it was often part of an appetizer tray. I really loved these though, and could devour an entire plate by myself. :D Sorry the ingredients and serving size are estimated, it's been literally 10 or more years since I've had the pleasure of making and/or eating these wonderful little appetizers, but I wanted to share with the 'Zaar community. This is a really iffy food for me to eat nowadays with IBS, because it's made with beef and cream cheese, although the cream cheese can be substituted with soy cream cheese like Tofutti Better Than Cream Cheese. We used Philadelphia brand back then.
