1 garlic clove, chopped
1 1/2 teaspoons fresh ginger, chopped
1 teaspoon peanut oil
1/2 cup mushroom, chopped
5 snow peas, quartered
1/4 red bell pepper, chopped (about 1/4 cup)
3 medium scallions or 3 medium green onions, chopped
1 1/2 teaspoons reduced sodium soy sauce
3 egg whites
1 omega- 3 egg, beaten

Steps:

  • In a skillet or wok on medium-high heat, brown garlic and ginger in half of the oil.
  • After a couple of minutes, add mushrooms, snow peas, and pepper.
  • Stirfry until mushrooms start to brown, and lose most of their moisture.
  • Add chopped scallions. Stir fry for another couple of minutes while drizzling half of the soy sauce over ther mixture.
  • Remove vegetables from skillet.
  • Add the remaining oil, then eggs.
  • When eggs start to bubble around the edges, stir them with a spatula until scrambled.
  • Just before eggs are completely cooked, add vegetables and mix thoroughly.
  • Serve warm, with remaining soy sauce drizzled over top after cooking.

1 piece fresh ginger (about .5 ounce)
0.5 bunch scallions
0.5 red chile pepper
0.5 stalk Lemongrass
3 eggs
3 tablespoons Coconut milk (9% fat)
salt
4 ounces Sprout (eg, bean sprouts or radish sprouts)
0.5 Lime

Steps:

  • Peel and finely chop ginger.
  • Rinse and chop scallions into thin rings.
  • Cut chile pepper in half lengthwise, remove seeds, rinse and finely chop.
  • Remove the tough outer layers of lemongrass and trim off the tough portion of the root end. Finely chop approximately 2 inches of the stalk closest to the root end.  
  • Whisk together eggs and coconut milk. Season with salt. Mix in ginger, scallions, chile pepper and lemongrass.
  • Pour egg mixture into a non-stick pan over low heat and slowly stir with a spatula, folding curds from edge of pan to center.
  • Rinse and drain bean sprouts.
  • Rinse lime and cut into wedges.
  • Serve scrambled eggs alongside bean sprouts and lime wedges.
