0.5 red Bell pepper
1 garlic
2 fresh red chile peppers
200 milliliters water
50 milliliters mild Red wine vinegar
2 tablespoons Lime juice
1 tablespoon sugar

Steps:

  • Rinse the pepper, remove the seeds, and finely dice. 
  • Peel and finely dice the garlic. 
  • Rinse the chilies (you can remove the seeds from the chilis for a milder sauce), and finely dice. Add the peppers, garlic, and chili to a small pot. Add 200 ml (approximately 7 ounces) of water, the vinegar, lime juice, and sugar. Simmer gently for 15 minutes.

3 cups sugar
3 cups cider vinegar
1/4 cup crushed red pepper flakes
6 garlic cloves, minced
2 tablespoons minced fresh gingerroot
1-1/2 teaspoons canning salt

Steps:

  • In a Dutch oven, bring sugar and vinegar to a boil. Reduce heat; simmer, uncovered, 5 minutes. Remove from heat; stir in the remaining ingredients. , Ladle hot liquid into 6 hot half-pint jars, leaving 1/4-in. headspace. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 20 minutes. Remove jars and cool.
