This recipe comes from a popular authentic Asian restaurant in San Fransisco, California This makes a big amount of sauce, but it can be scaled down to meet requirements, or it will store nicely in the fridge for up to 2 weeks.

Yield 7-10 cups or depending on how much is prepared

Number Of Ingredients 6

2 1/4 quarts cider vinegar
22 ounces honey
2 cups chopped green onions
3/4 cup fresh minced ginger
2/3 cup asian garlic and red chile paste (or 2/3 cup chili-garlic sauce)
10 ounces sesame oil

Steps:

  • In a large bowl, combine all ingredients except the sesame oil; stir to mix thoroughly.
  • Using a wire whisk, slowly drizzle in sesame oil while whisking sauce to combine Sauce can be stored in the refrigerator for up to 2 weeks.
  • Serve at room temperature.
  • Whisk again before serving to combine ingredients.

Number Of Ingredients 7

1?½ pounds fresh hot red chile peppers, such as Fresno, Thai, jalapeño, and/or serrano, stemmed and coarsely chopped*
¼ cup packed brown sugar
¼ cup water
1 tablespoon kosher salt
5 cloves garlic, smashed
½ cup rice vinegar
1 teaspoon fish sauce (optional)

Steps:

  • In a food processor or blender combine chile peppers, brown sugar, the water, salt, and garlic. Cover and process or blend about 3 minutes or until smooth.
  • Transfer mixture to a 2-quart food-safe ceramic, glass, or plastic bowl or container. Cover loosely with plastic wrap. Place in a dark, dry place at room temperature and let stand for 8 days to ferment, stirring once every day. After 2 to 3 days you should notice bubbling in the mixture, showing that fermentation is occurring.
  • Return mixture to food processor or blender. Add vinegar. Cover and process or blend until very smooth. Strain mixture through a fine-mesh sieve into a large saucepan; discard solids.
  • Bring to boiling; reduce heat. Simmer, uncovered, for 5 to 10 minutes or until slightly thickened, stirring frequently (the sauce with thicken a bit more as it cools). Remove from heat. If desired, stir in fish sauce. Cool to room temperature.
  • Transfer chili sauce to canning jars or airtight storage containers. Seal and store in the refrigerator for up to 6 months.

  • In a food processor, add in the chili peppers, onion and garlic. Process until desired consistency. I like mine a rough mince. In a wok, large pot or large sauté pan, heat the cooking oil until shimmering on medium high heat. Add in the pepper/onion/garlic mixture and cook until fragrant, about 1 minute. Add in the remaining ingredients, mix well and bring to a simmer. Turn heat to low and cook for 20 minutes, stirring occasionally. Quickly taste and decide if you would like to add more spicy-hot chili pepper. Taste and adjust seasonings. If you feel like it needs more saltiness and savoriness, add 1 tablespoon of fish sauce. Need it sweeter - 1 tablespoon brown sugar. If the sauce is lacking that tang, or high flavor note - 1 tablespoon vinegar.
