Number Of Ingredients 11

2 (6 ounce) jars marinated artichoke hearts
1 small onion, finely chopped
1 garlic clove, minced
4 eggs, beaten
1/4 cup plain fine breadcrumbs
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon oregano
1/8 teaspoon hot pepper sauce
2 cups sharp cheddar cheese, shredded
2 tablespoons fresh parsley, minced

Steps:

  • Preheat oven to 325 degrees.
  • Drain marinade from 1 jar of artichokes hearts into medium skillet.
  • Drain second jar and discard marinade (or reserve for use in salads).
  • Chop artichokes and set aside.
  • Heat oil, add onion and garlic and saute until onion is limp, about 5 minutes.
  • Combine eggs,breadcrumbs,salt, pepper, oregano and hot sauce.
  • Fold in cheese and parsley.
  • Add artichokes and sauteed onion mixture, blending well.
  • Pour into a greased 9 inch square baking dish.
  • Bake for 30 minutes.
  • Allow to cool slightly before cutting into 1 inch squares.
  • * May be prepared a day or two ahead and reheated 10 to 12 minutes.

2 jars artichokes (reserve liquid)
1/4 cup chopped onion (I like yellow)
4 eggs
3 -4 cloves garlic, chopped
1/8 teaspoon oregano
1 teaspoon Tabasco sauce (or more if you like)
1/4 cup dried breadcrumbs
1/4 teaspoon salt
1/4 teaspoon pepper
8 ounces cheddar cheese, shredded

Steps:

  • Pre-heat oven to 325-350 f.
  • grease pan (I use a 9x9 brownie pan).
  • chop artichokes.
  • saute onion in artichoke liquid until soft,drain, set aside.
  • beat eggs.
  • add spices,artichokes,cheese and onion.
  • bake 30 minutes.
  • cool and cut into squares.

  • Preheat oven to 325°. In a small skillet, saute onion and garlic in oil until tender. Stir in artichokes. Remove from the heat; set aside. In a large bowl, whisk the eggs, parsley, salt, pepper, oregano and hot pepper sauce. Stir in the cheese, cracker crumbs and artichoke mixture., Pour into a greased 11x7-in. baking dish. Bake, uncovered, until a thermometer reads 160°, 25-30 minutes. Cool for 10-15 minutes before cutting. Serve warm.
