Sweet fresh corn kernels cook briefly with sautéed onions and blend into an irresistibly creamy sauce for crisp zucchini noodles. The serving size is generous and satisfying, and you can feel good about eating a plate full of veggie goodness. Be sure to blend long enough for the sauce to get smooth—and do use a blender, as a food processor won’t yield the same results. We cook the zoodles briefly, just to warm them without wilting them or causing them to water out. Look for prepared zucchini spirals in your grocery store’s produce section to streamline prep.

1 cup(s) Uncooked onion(s) sweet, finely chopped
2 cup(s) Uncooked sweet yellow corn fresh
0.5 tsp Kosher salt
0.125 tsp Crushed red pepper flakes or up to 1/4 tsp
0.25 cup(s) Water
1 pound(s) Fresh zucchini spirals 6 cups
0.25 cup(s) Grated Parmesan cheese
0.25 cup(s) Basil thinly sliced
1 Tbsp Chives thinly sliced

Steps:

  • Heat a large skillet over medium-high heat. Add butter to pan and swirl until butter melts. Add onion; sauté 5 minutes or until onion is tender and starting to brown. Stir in corn, salt, and red pepper; sauté until corn is crisp and barely cooked, 2 to 3 minutes.
  • Reserve ½ cup corn mixture. Place remaining corn mixture in a blender, and add ¼ cup water. Remove center piece of blender lid to allow steam to escape; place a clean towel or double layer of paper towels over opening in lid. Blend on high speed until sauce is creamy and smooth, about 1 minute.
  • Scrape sauce into pan over medium-low heat. Add cheese and stir until cheese melts. Add zucchini to pan; cook, tossing to coat with sauce, until just warmed, about 2 minutes. Remove from heat and stir in basil. Sprinkle with reserved corn mixture and chives.
  • Serving size: about 2 ? cups

This healthy summer dinner subs zoodles for pasta to help use up your zucchini bounty--as well as slash calories and carbs. Once the spiralized zucchini has time to soak up the herby pesto sauce, this chicken and pesto pasta makes particularly good leftovers.

4 medium-large zucchini (about 2 pounds), trimmed
¾ teaspoon salt, divided
2 cups packed fresh basil leaves
¼ cup pine nuts, toasted
¼ cup grated Parmesan cheese
1/4 cup plus 2 tablespoons extra-virgin olive oil, divided
2 tablespoons lemon juice
1 large clove garlic, quartered
½ teaspoon ground pepper
1 pound boneless, skinless chicken breast, cut into 1-inch pieces

Steps:

  • Using a spiral vegetable slicer, cut zucchini lengthwise into long, thin strands. Give the strands a chop here and there so the noodles aren't too long. Place the zucchini in a colander and toss with 1/4 teaspoon salt. Let drain for 15 to 30 minutes, then gently squeeze to remove any excess liquid.
  • Meanwhile, place basil, pine nuts, Parmesan, 1/4 cup oil, lemon juice, garlic, pepper and 1/4 teaspoon salt in a mini food processor. Process until almost smooth.
  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Add chicken in one layer; sprinkle with the remaining 1/4 teaspoon salt. Cook, stirring, until just cooked through, about 5 minutes. Transfer to a large bowl and stir in 3 tablespoons of the pesto.
  • Add the remaining 1 tablespoon oil to the pan. Add the drained zucchini noodles and toss gently until hot, 2 to 3 minutes. Transfer to the bowl with the chicken. Add the remaining pesto and toss gently to coat.

Add noodles to the lined sheet, making sure they are evenly spaced and not overcrowded. Use two baking sheets as needed. 4. Roast for about 10 to 15 minutes, or until noodles have reached preferred consistency. Check and flip noodles throughout to ensure even cooking. 5. While the noodles are roasting, quickly whip up the pesto sauce. Add the basil, garlic, and pine nuts to a blender or food processor. Pulse until finely chopped. 6. Slowly add the olive oil and process until fully incorporated and smooth. Stop and scrape sides and slowly thin the pesto out with more olive oil as needed. 7. Gently mix in the cheese and add salt and pepper to taste. 8. Add the cooked zoodles into a large bowl then top with the pesto sauce. 9. Garnish with shredded chicken, cherry tomatoes, toasted pine nuts, etc. as desired and enjoy!
