200 grams light gluten-free Pastry flour (such as Finax)
170 grams cold butter (cubed)
125 grams sugar
1 packet Vanilla sugar
100 grams ground Pistachio
100 grams ground almonds
3 drops Almond extract
200 grams Chocolate frosting (Finished product)
20 grams chopped Pistachio
gluten-free Pastry flour (for rolling out)
Parchment paper (for lining the baking sheet)

Steps:

  • Line a baking sheet with parchment paper. Sift the flour into a large bowl. Add the cold butter cubes, sugar, vanilla sugar, ground pistachios, ground almonds and almond extract. Mix everything together using a pastry cutter or two forks, then quickly knead with hands to form a smooth dough. Wrap with plastic wrap and refrigerate for about 1 hour. 
  • Preheat the oven to 190°C/170°C convection (approximately 375°C/340°F convection). Roll the dough out onto a floured surface to about 0.5 cm (approximately 1/5 inch) thick. Cut into 6 x 2 cm (approximately 2.5 x 3/4 inch) strips and place onto the prepared baking sheet. Bake for 9-10 minutes, until light golden brown. 
  • Remove the bars from the oven and allow to cool on the baking sheet. Spread the chocolate frosting onto the cooled bars and sprinkle with chopped pistachios. Store in an airtight container.

3/4 cup Land O Lakes® Butter softened
1/2 cup powdered sugar
1 large Land O Lakes® Egg
1 teaspoon almond extract
1 1/2 cups Gluten-Free Flour Blend (see below)
1/2 teaspoon salt
1/4 cup sugar
Drizzle
1/2 cup white baking chips or vanilla-flavored candy coating (almond bark)
1/4 cup roasted and salted shelled pistachio nuts, coarsely chopped

Steps:

  • Combine butter and powdered sugar in bowl; beat at medium speed until creamy. Add egg and almond extract; continue beating until well mixed. Add gluten-free flour blend and salt; beat at low speed until well mixed. Cover bowl with plastic food wrap; refrigerate 1 hour or until firm.
  • Heat oven to 350°F.
  • Place sugar into bowl. Shape dough into 1-inch balls; roll in sugar. Place 2 inches apart onto ungreased cookie sheets. Using drinking glass with flat bottom, flatten each cookie to 1/4-inch thickness. (If cookies stick to glass, dip bottom of glass in sugar.) Bake 8-10 minutes or until lightly browned on bottom. Cool completely.
  • Place white baking chips in resealable plastic food bag. Microwave on Medium (50% power) 30-60 seconds, kneading bag every 15 seconds, until melted. Snip small opening at 1 corner. Drizzle melted chips over cooled cookies. Immediately sprinkle each cookie with 1/4 to 1/2 teaspoon chopped pistachios. Let stand until drizzle is set.
