I make this wonderful recipe all the time and found that it is a lot better to not pan fry the chops in oil. Baking makes it a lot better for you and still tastes great.

6 pork chops
1 teaspoon garlic powder
1 teaspoon seasoning salt
¼ cup all-purpose flour
2 eggs, beaten
2 cups Italian-style seasoned bread crumbs
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup non-fat milk
? cup white wine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rinse pork chops, pat dry, and season with garlic powder and seasoning salt to taste. Gently press pork into flour to coat and shake off excess flour. Dip into beaten egg, then press into bread crumbs. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Place breaded pork into a 9x13-inch baking dish.; do not stack.
  • Bake in preheated oven to brown bread crumbs, about 10 minutes. Cover with aluminum foil and bake for 1 hour.
  • While baking, combine cream of mushroom soup, milk, and white wine in a bowl. After pork chops have baked for one hour, cover with soup mixture. Replace foil and bake until sauce is hot and bubbly and pork juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).

These whole-wheat panko breadcrumb-coated pork chops get just as crispy as fried chops, but they're healthier. ¼ cup all-purpose flour
1 large egg, lightly beaten
1 teaspoon Dijon mustard
¾ cup whole-wheat panko breadcrumbs
1 teaspoon ground pepper
½ teaspoon kosher salt
4 (4 ounce) 3/4-inch-thick boneless pork chops

Steps:

  • Preheat oven to 400 degrees F. Place a wire rack on a large baking sheet and coat with cooking spray. Place flour in a shallow dish. Combine beaten egg and mustard in another small dish. Combine panko and pepper in a third shallow dish.
  • Sprinkle salt over both sides of the pork. Dredge each pork chop in flour, shaking off the excess. Coat in egg mixture, then panko, pressing to adhere. Place on the prepared rack. Coat the pork chops with cooking spray. Bake until the chops are beginning to brown and are cooked throughout (an instant-read thermometer inserted in the center should register 145 degrees F), 18 to 20 minutes.
