Here's a simple, easy-to-make sauce that I've had for over 25 years. I usually use canned, unpeeled apricot halves. My family finds it great tasting, warm or chilled over ice cream, sherbert, pound cake, waffles, pancakes, or.....

Number Of Ingredients 6

2 tablespoons cornstarch
1/2 cup sugar
1 1/2 cups apricot nectar
1 tablespoon lemon juice
3/4 teaspoon almond extract
1 cup apricot halves, drained, chopped

Steps:

  • In a sauceman, blend the cornstarch & sugar, then add the nectar.
  • Heat, stirring constantly, until thickened.
  • Remove from the heat & add the rest of the ingredients & mix well.
  • Serve warm or chilled.

½ a bunch of thyme (10g)
125 g dried apricots
½ a small fresh red chilli
extra virgin olive oil

Steps:

  • This works great as a stand-alone recipe, but also as a component in Jamie’s Summery Feast from Together – see the full collection of menus here. GET AHEAD Put the thyme into a mug and cover with 150ml of boiling kettle water, discarding the thyme after 1 minute. Put the dried apricots into a blender. Halve, deseed and add the red chilli, drizzle in 2 tablespoons of extra virgin olive oil and add a pinch of sea salt. Pour the thyme-infused water into the blender, and blitz until super-smooth. Decant into a nice serving bowl, cool, cover and refrigerate until needed. TO SERVE Delicious served with the Slow-roasted lamb, Lemon potatoes and Dressed beans.
