We really like Apricot Chicken. In the summer I hate to heat up the house. DH made this for a cookout. Absolutely delicious! **There is also a variation in the directions for Asian Glazed Chicken. *PLEASE NOTE!* For easier clean up I would suggest using a grill pan or aluminum to cook the chicken on. Found this recipe in Cooking Light.

3 tablespoons apricot preserves
2 tablespoons red wine vinegar
1 1/2 tablespoons extra virgin olive oil
1 garlic clove, minced
2 bone-in chicken breast halves, skinned
2 bone-in chicken thighs, skinned
2 chicken drumsticks, skinned
1/2 teaspoon fine sea salt
1/4 teaspoon fresh ground black pepper
cooking spray

Steps:

  • Combine first 4 ingredients in a small bowl, stirring well.
  • 2. Prepare grill for indirect grilling. If using a gas grill, heat one side to medium-high and leave one side with no heat. If using a charcoal grill, arrange hot coals on one side of charcoal grate, leaving the other side empty.
  • 3. Let chicken stand at room temperature for 30 minutes. Sprinkle chicken evenly with salt and pepper. Place chicken, meaty sides down, on grill rack coated with cooking spray over direct heat; grill 5 minutes or until browned.
  • 4. Turn chicken over; baste with apricot mixture. Grill 5 minutes over direct heat or until browned. Turn chicken over, moving it over indirect heat; baste with apricot mixture. Cover and cook 15 minutes. Turn chicken over; baste with apricot mixture. Cook 20 minutes or until done.
  • Asian-Glazed Grilled Chicken Variation:.
  • Combine 2 tablespoons hoisin sauce, 1 tablespoon honey, 1 tablespoon dark sesame oil, 1 teaspoon sambal oelek (or other hot chile sauce), and 3 minced garlic cloves, stirring well until blended. Prepare Apricot-Glazed Grilled Chicken, omitting apricot preserves, vinegar, olive oil, and garlic. Baste chicken with hoisin mixture after each turn. Yield: 4 servings (serving size: 1 chicken breast half or 1 thigh and 1 drumstick).

4 pound chicken wings, tips removed, and cut at the joint
1 teaspoon kosher salt
3/4 cup apricot preserves
2 garlic cloves, mashed
1 tablespoon chopped fresh ginger
1/4 cup soy sauce
1/2 teaspoon red pepper flakes
juice from one lime, about 2 tablespoons
1 tablespoon balsamic vinegar
1/2 teaspoon cumin
2 tablespoon chopped chives
fresh lime wedges, for garnish

Steps:

  • Season wings with salt.
  • Heat grill to medium high.
  • In the bowl of a food processor (small if available), combine preserves, garlic, ginger, soy sauce, red pepper flakes, lime juice, vinegar, and cumin process until smooth.
  • Add chives.
  • Place wings on the grill and cook for 8-10 minutes.
  • Turn, and grill for another 5-6 minutes.
  • With a pastry brush or spoon, brush the sauce on the wings.
  • Cook for about 1 minute, and turn.
  • Repeat on other side of wings.
  • Cook for another 1 minute.
  • Wings should register 170º F when tested with an instant read thermometer.
  • Serve the wings garnished with lime wedges.

Let the flavors blend together for about 15 minutes, and then strain to make the sauce smooth. Brush the chicken with olive oil, then lightly season the chicken with salt. The marinade contains soy sauce, which is very salty, so only a little salt is needed. Place the chicken in a grill pan, or preferably on a gas or charcoal grill at a moderate to high temperature. The chicken needs to be 180°F, so when it reaches about 140°F, begin brushing it with the marinade. If you put the marinade on in the beginning, the sugars will burn and taste bitter. Make sure to place half of the marinade in a separate bowl before you start brushing it onto the chicken, because you don’t want to contaminate the rest of the sauce with raw chicken, as it will be used as a sauce at the end of cooking. Keep brushing with the marinade every few minutes until the internal temperature of the chicken reaches about 170°F. Carryover cooking should take the chicken the rest of the way to 180°F. If you wait until the chicken reaches 180°F it will overcook and become dry as it continues to cook when taken off the grill. Add thinly sliced scallions to the reserved sauce and pour over the chicken right before serving, or place a small amount onto each plate and serve the chicken on top.

This recipe is from the California Poultry or EATCHICKEN.COM It looked too good not to post!! This is in the oven since its been too cold to grill here. Bake at 350*F for 45 minutes till done then for the last 5 minutes baste with the glaze and marvel at your handy work! I freeze my ginger nobs and grate the frozen ginger onto wax paper and that seems to help me from running out of ginger when I get the notion to add Asian Flair to a recipe.
