2 teaspoons brown sugar
1-1 1/2 pounds pounds kale, ribs removed, coarsely chopped (see Tip)
1 tablespoon extra-virgin olive oil
2 Granny Smith apples, sliced
? cup water
4 teaspoons whole-grain mustard
2 tablespoons cider vinegar
Pinch of salt

Steps:

  • Heat oil in a Dutch oven over medium heat. Add kale and cook, tossing with two large spoons, until bright green, about 1 minute. Add water, cover and cook, stirring occasionally, for 3 minutes. Stir in apples; cover and cook, stirring occasionally, until the kale is tender, 8 to 10 minutes more.
  • Meanwhile, whisk vinegar, mustard, brown sugar and salt in a small bowl. Add the mixture to the kale, increase heat to high and boil, uncovered, until most of the liquid evaporates, 3 to 4 minutes.

1 cup dry white wine
1/2 cup white grape juice
2 sticks cinnamon
1 pared lemon, rind of
3/4 lb green cooking apple, peeled, cored and diced
3/4 lb pear, peeled, cored and diced
1/2 lb seedless green grape, peeled
3/4 cup Dijon mustard
1/2 teaspoon dark mustard seeds

Steps:

  • Place wine, grape juice, cinnamon sticks and lemon rind in a saucepan.
  • Bring to a boil. Simmer for 5 minutes.
  • Discard lemon rind. Simmer for a further 5 minutes. Discard cinnamon sticks.
  • Add fruit. Simmer for 15 to 20 minutes or until just tender. carefully blend in mustard and seeds.
  • Simmer for further 2 to 3 minutes. Pour into warm sterilized jars. Seal.
