4 cups apples (peeled and sliced)
2 cups frozen cherries (may use pitted fresh, sweet or tart)
1/2 cup brown sugar
1 teaspoon quick-cooking tapioca (not whole pearl)
1 1/2 cups rolled oats (or grape-nuts cereal)
1/4 cup unbleached white flour
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
1 egg white
1 tablespoon vegetable oil (canola or other)
1 teaspoon pure vanilla extract
2 tablespoons orange juice (or unsweetened apple)

Steps:

  • Preheat oven to 350 degrees.
  • In a bowl, mix together the fruit layer ingredients. Pour the fruit evenly into a non-reactive 10 inch pie pan or 9 inch square baking dish and set aside.
  • In a large bowl, combine the oats, flour, brown sugar, and cinnamon.
  • In a seperate bowl, whisk together the egg white, oil, vanilla, and fruit juice and then stir into the dry ingredients until thoroughly combined.
  • Carefully spread the topping over the fruit (be sure to cover the fruit entirely).
  • Cover and bake for 20 minutes, then uncover and continue to bake for another 20 to 30 minutes, until the fruit is soft and bubbly and the topping is crisp and golden.

½ cup butter, softened

Steps:

  • Combine apples, cherries, lemon rind, juice, and cinnamon; toss well. Spoon mixture into a lightly greased 13- x 9- x 2-inch baking dish
  • Combine flour, sugar, and salt in a large mixing bowl; cut in butter with a pastry blender until mixture resembles coarse meal. Sprinkle topping over fruit mixture. Bake, uncovered, at 350° for 55 minutes or until apples are tender and topping is golden brown. Serve warm with ice cream, if desired.
