This moist Snickerdoodle Apple Bread is such an easy recipe to whip up on the weekend. Works as a grab and go breakfast, or a sweet snack idea.

1/2 tsp salt
1 1/2 tsp baking powder
1 1/2 cups all-purpose flour
1/2 Tbsp ground cinnamon
1/2 cup salted butter, (softened)
1 cup brown sugar, (packed)
1/4 cup granulated sugar
2 large eggs
1 Tbsp vanilla extract
1/2 cup milk
1 large apple, (diced)
2 Tbsp granulated sugar
1 tsp ground cinnamon

Steps:

  • Preheat the oven to 350°F. Lightly grease a loaf pan and set aside.
  • In a medium bowl, mix together the salt, baking powder, flour and cinnamon. Set aside.
  • In the bowl of a stand mixer, cream together the butter and both the sugars until light and fluffy. Add in the eggs one at a time, mixing after each addition. Mix in the vanilla.
  • Alternate between mixing in the dry ingredients and the milk into the sugar mixture until just combined. Fold in the apples.
  • Pour the batter into the prepared baking pan and set aside.
  • In a small bowl, mix together the topping ingredients. Sprinkle on top of the batter.
  • Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted comes out clean.
  • Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

2 cups white sugar
1 cup butter, softened
2 teaspoons ground cinnamon
½ teaspoon salt
3 eggs
¾ cup sour cream
1 teaspoon vanilla extract
2?½ cups all-purpose flour
1 teaspoon baking powder
1 (10 ounce) package cinnamon chips (such as HERSHEY'S®)
3 tablespoons white sugar
3 teaspoons ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease 4 mini loaf pans.
  • Cream together sugar, butter, cinnamon, and salt with an electric mixer until fluffy, about 5 minutes. Add eggs and mix well. Mix in sour cream and vanilla until combined.
  • Combine flour and baking powder in a separate bowl. Pour into egg mixture and mix well. Stir cinnamon chips into batter. Spoon batter into 4 mini loaf pans until 2/3 full.
  • Mix 3 tablespoons sugar and cinnamon together in a small bowl. Sprinkle topping over the batter in each loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the centers come out clean, 35 to 38 minutes. Let cool completely before removing from the pans.
