- In a large bowl, combine the applesauce, milk, brown sugar, egg substitute, vanilla and cinnamon. Fold in bread cubes and apple; let stand for 15 minutes or until bread is softened. , Pour into an 8-in. square baking dish coated with cooking spray. Bake, uncovered, at 325° for 35-40 minutes or until a knife inserted in the center comes out clean. Serve warm with whipped topping and caramel topping. Refrigerate leftovers.

VEGAN APPLE SPONGE PUDDING | TINNED TOMATOES

Steps:
- Preheat the oven to 180c/160c fan/gas mark 4/350f.
- Add the milk to a jug with the lemon juice, mix and set aside.
- Add the chopped apples to a pan with the sugar and water and cook for a few minutes until just starting to soften.
- Pour the apples into a casserole dish.
- Add the flour and sugar to a large mixing bowl, then add the sugar, salt and baking powder and mix well.
- Add vanilla extract and oil to the milk and stir.
- Pour the wet ingredients into the dry ingredients and fold in until just combined.
- Pour the batter over the apples in the casserole dish and bake for 1 hour.
- Check it before the hour to see if it is cooked through with a skewer or toothpick.
- If it needs longer but starts to go beyond golden, you can cover with foil and bake a little longer
- Serve warm with custard, ice cream or cream.
