1 cup unsweetened applesauce
1 cup fat-free milk
1/2 cup packed brown sugar
1/2 cup egg substitute
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
5 cups cubed day-old bread
1/2 cup chopped peeled apple
1/2 cup fat-free whipped topping
1/2 cup fat-free caramel ice cream topping

Steps:

  • In a large bowl, combine the applesauce, milk, brown sugar, egg substitute, vanilla and cinnamon. Fold in bread cubes and apple; let stand for 15 minutes or until bread is softened. , Pour into an 8-in. square baking dish coated with cooking spray. Bake, uncovered, at 325° for 35-40 minutes or until a knife inserted in the center comes out clean. Serve warm with whipped topping and caramel topping. Refrigerate leftovers.

Vegan Apple Sponge Pudding | Tinned Tomatoes image

A comforting vegan apple sponge pudding baked in the oven. Just gorgeous served with vegan vanilla ice cream or custard.

Number Of Ingredients 12

3 cooking apples (4-5 eating apples), peeled, cored and chopped
2 tablespoon caster sugar
1 tablespoon lemon juice (toss the apple in it to stop it browning), optional
2 tablespoon water
300ml (1 cup) oat milk (or your regular milk)
1 teaspoon lemon juice
1 teaspoon vanilla extract
75 ml (1/3 cup) vegetable oil
300g (1 3/4 cups) plain flour (all-purpose flour)
250g (1 1/4 cups) caster sugar
1 teaspoon baking powder
pinch salt

Steps:

  • Preheat the oven to 180c/160c fan/gas mark 4/350f.
  • Add the milk to a jug with the lemon juice, mix and set aside.
  • Add the chopped apples to a pan with the sugar and water and cook for a few minutes until just starting to soften.
  • Pour the apples into a casserole dish.
  • Add the flour and sugar to a large mixing bowl, then add the sugar, salt and baking powder and mix well.
  • Add vanilla extract and oil to the milk and stir.
  • Pour the wet ingredients into the dry ingredients and fold in until just combined.
  • Pour the batter over the apples in the casserole dish and bake for 1 hour.
  • Check it before the hour to see if it is cooked through with a skewer or toothpick.
  • If it needs longer but starts to go beyond golden, you can cover with foil and bake a little longer
  • Serve warm with custard, ice cream or cream.
  • Enjoy!
