Apple Pie Ricotta Waffles Recipe: How to Make It image

I had apples and ricotta cheese to use up, so instead of making a pie I decided to do something different. The result was these fluffy, tender waffles with just a hint of sweetness. —Teri Rasey, Cadillac, Michigan

1/4 cup butter
6 medium apples, peeled and chopped
2 tablespoons sugar
1 tablespoon honey
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
WAFFLES:
2 cups all-purpose flour
2 tablespoons quick-cooking grits
1 tablespoon cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, room temperature
2 cups buttermilk
1 cup reduced-fat ricotta cheese
1/2 cup canola oil
2 teaspoons vanilla extract
1-1/2 cups fat-free vanilla Greek yogurt
Fresh blueberries, optional

Steps:

  • In a large skillet, melt butter over medium-high heat. Add apples, sugar, honey, cinnamon and vanilla; cook and stir until apples are crisp-tender, 10-12 minutes. Remove from heat and keep warm., Preheat waffle iron. In a large bowl, whisk flour, grits, cornstarch, baking soda and salt. In another bowl, whisk eggs, buttermilk, ricotta, oil and vanilla until blended. Add to dry ingredients; stir just until moistened., Bake waffles according to manufacturer’s directions until golden brown. Serve with apple topping, yogurt and, if desired, blueberries.

1 can (16.3 oz) refrigerated Pillsbury™ Grands!™ Southern Homestyle Original Biscuits (8 Count)
About 1/2 can (21-ounce size) apple pie filling
Whipped cream, caramel sauce and/or maple syrup

Steps:

  • Spray waffle maker with cooking spray. Heat waffle maker to medium-high. Open and separate 1 can (16.3 oz) Pillsbury™ Grands!™ Southern Homestyle refrigerated Original biscuits into 8 biscuits.
  • Cut each biscuit horizontally, like you’re cutting a sandwich roll.
  • Place 1/2 can (21-oz size) apple pie filling in small bowl. If apples are large, cut them in half so they’ll fit in the biscuits. Place 1 to 2 tablespoons apple pieces in center of one half of each biscuit. Top with remaining half.
  • Use fork to pinch edges of biscuit closed.
  • Place waffles on hot waffle maker 1 or 2 at a time (depending on size of waffle maker). Close lid of waffle maker. Bake 1 minute. Remove carefully to plate to cool.
  • Serve waffles warm and topped with whipped cream and caramel sauce as a dessert or with maple syrup as a breakfast.
