Rach's Apple-Pecan French Toast casserole is a make-ahead recipe AND it can feed a crowd.

Provided by Rachael Ray

Number Of Ingredients 24

2 tablespoons EVOO Extra Virgin Olive Oil
2 pounds breakfast sausage or Italian sweet sausage
casings removed
1 tablespoon thyme
finely chopped
3 to 4 leaves sage
finely chopped
1 tablespoon plus 1 stick butter
divided
1 loaf Pullman bread
cubed and toasted (about 5-6 cups)
1 cup pecans
toasted and chopped
2 apples
diced
12 large eggs
beaten
1/2 cup maple syrup plus 1/4 cup
3 cups milk
2 teaspoons cinnamon
A few grates fresh nutmeg
Salt
Peel of 1 lemon
1 cinnamon stick

Steps:

  • Preheat a large skillet over medium-high heat with 2 turns of the pan with EVOO, about 2 tablespoons
  • Add in breakfast sausage, thyme and sage, and cook until crisp and golden brown
  • Let cool
  • With 1 tablespoon of butter, generously grease a 9x13 casserole dish
  • In the dish, toss the sausage and herb mixture with cubed bread, pecans and apples
  • In a large mixing bowl, combine the eggs, 1/2 cup maple syrup, milk, cinnamon, nutmeg and salt, and whisk until blended
  • Pour over the bread and sausage mixture, making sure its covered evenly
  • Cover with foil and place in the refrigerator overnight
  • The next day, preheat the oven to 375F
  • Dot the top of the casserole with 1 stick of butter
  • Bake covered for 1 hour, until puffed and remove foil and bake uncovered until golden brown, around 15 minutes
  • Over medium heat, in a small saucepot, combine 1/4 cup maple syrup, lemon peel and cinnamon stick until warmed through
  • To serve, scoop casserole onto a plate and serve with warm maple syrup on top

15 slices multigrain bread (gluten-free if necessary)
4 eggs
1 C liquid egg whites
1 C unsweetened vanilla almond milk
½ C nonfat vanilla greek yogurt
¼ C sugar-free maple syrup
1 tsp cinnamon
¼ tsp nutmeg
dairy-free whipped cream (optional)
2 red apples, thinly sliced
¾ C chopped pecans
6 Tbsp sugar-free maple syrup
¼ C Stevia
1 tsp cinnamon
¼ tsp nutmeg

Steps:

  • Preheat the oven to 350°F and spray a 9x13 baking dish with cooking spray.
  • Cut the slices of bread into 1" squares and add them to the baking dish.
  • In a large mixing bowl, whisk together the remaining "french toast" ingredients until well combined. Pour into the casserole dish, then gently fold the bread into the egg mixture until all the bread is soaked. Press the cubes of bread into a flat layer.
  • Bake for 40 minutes or until the french toast casserole is baked all the way through.
  • While the casserole is baking, make your topping. Heat a large skillet to medium heat and spray generously with cooking spray. In a small bowl, combine the Stevia, cinnamon, and nutmeg. Add half the apples, half the pecans, half the maple syrup, and half the cinnamon sugar to the skillet. Cook until the apples are softened and the pecans have caramelized, about 10 minutes. Remove and repeat with the remaining "topping" ingredients. Once all the topping ingredients have been cooked, set aside and cover with foil.
  • When the casserole is finished, spread the apple pecan topping over the top of the french toast and let cool for 5 minutes. Slice into 12 pieces and serve with more maple syrup and some whipped cream. Enjoy!
