Beat the Dijon mustard into the apples with a pinch of salt, but stop when the sauce is still a little rough - don't continue beating until smooth. Check the seasoning and beat in a little extra sugar to taste. The sauce will keep in the fridge for up to two days. Serve warm or cold.
