APPLE JAM RECIPE | BBC GOOD FOOD

Apple jam recipe | BBC Good Food image

Make up jars of homemade apple jam and gift to friends and family. It's delicious spread simply on toast, or as a filling in your favourite cakes and bakes

Provided by Adam Bush

Total Time 55 minutes

Prep Time 15 minutes

Cook Time 40 minutes

Yield Makes 2 x 500g jars

Number Of Ingredients 4

1kg Bramley apples, peeled, cored and chopped
250g caster sugar
½ lemon, juiced
1 cinnamon stick

Steps:

  • Put a small plate in the freezer. Tip the chopped apple and caster sugar into a large saucepan along with 350ml of water and bring to a simmer, stirring to dissolve the sugar.
  • Cook gently, stirring regularly, for 30 mins until the apples have collapsed.
  • Stir in the lemon juice, add the cinnamon stick and simmer gently for another 2-3 mins until the mixture is thick and glossy.
  • Remove the small plate from the freezer and drop a little of the mix onto it. Leave for a few seconds – it should be fairly firm. If it’s still a little runny, put the pan back of the heat and simmer for another 10-15 mins. Put the plate back in the freezer and test again, it should now be ready.
  • Divide between clean, sterilised jars and seal. Will keep for three months in a cool, dry place. Once opened, chill and use within one month.

APPLE JAM (APPLE PIE IN A JAR) RECIPE | ALLRECIPES

Apple Jam (Apple Pie in a Jar) Recipe | Allrecipes image

This is apple jam - something you can't seem to buy - spiced to resemble the taste of most apple pies. Usually there is enough pectin in the apples to make it jell without adding anything. You can use 1 package of pectin (such as SureJel®), if desired.

Total Time 2 hours 20 minutes

Prep Time 25 minutes

Cook Time 55 minutes

Yield 5 half-pint jars

Number Of Ingredients 9

6 Granny Smith apples - peeled, cored, and finely chopped
4 cups white sugar
½ cup light brown sugar
1 large lemon, zested and juiced
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
? teaspoon allspice
5 half-pint canning jars with lids and rings

Steps:

  • Combine apples, white sugar, light brown sugar, lemon juice, lemon zest, cinnamon, nutmeg, cloves, and allspice in a pot; bring to a rolling boil. Cook at a boil, stirring occasionally, until fruit is soft and jam gelling point (220 degrees F (104 degrees C) is reached, at least 45 minutes. Put a small amount of jam on a cold plate; freeze for several minutes. If the mixture is gelled, it is ready to process in a canner.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack apple jam into hot, sterilized jars, filling to within 1/4 inch of the top. Run a knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

  • Place a small plate in your freezer. Peel, core, and roughly chop your apples into ¾” to 1" pieces. Combine apples with 1½ cups water in a heavy bottomed pot or sauce pan over medium-high heat. Bring to a simmer, stirring occasionally, and cook until fruit is tender and mixture has reduced by ¼, about 15 minutes.  Add the sugar, reduce heat to medium, and cook, stirring frequently, until mixture is jammy and thick, about 25 minutes more. Add lemon juice and cinnamon stick if using, and stir to incorporate. Simmer 5 to 7 more minutes to allow cinnamon to infuse. To test if jam is ready, place a small spoonful onto prepared cold plate. Let sit 2 minutes, then drag your finger through the spoonful of jam. If it holds its shape, it's good to go! If it appears runny or watery, continue cooking. When jam has reached desired consistency, remove cinnamon stick. Divide between clean jars, and seal tightly. Refrigerate. Jam will last up to 2 weeks.

  • 1. Peel, core, and dice the apples. (Be sure to chop the fruit into small chunks, about 1/4 to 1/2 inch cubes, as they'll remain close to that size in the finished jam.) 2. Toss the chopped apples in lemon juice and sugar, cover, and refrigerate for overnight (12 to 24 hours). This step is important, and at an absolute minimum, they need 4 hours, preferably more. Macerating the fruit in sugar helps it retain a chunky texture, rather than turn into applesauce. 3. Prepare a water bath canner (if canning, skip for a freezer jam). 4.Place the apple mixture into a heavy-bottomed saucepan and bring to a boil over high heat. The mixture will foam, so be sure your pan is big enough to handle foaming to avoid overflows. 5. Stir apple/sugar mixture occasionally, watching for overflows, and cook for about 20-30 minutes. If apple pieces are too large, crush slightly with a potato masher (optional). 6. Cook until the apple jam reaches gel stage, using an instant-read thermometer or testing a small amount on a plate placed in the freezer. (Gel stage is 220 degrees F at sea level and a bit below that at higher elevations.  The finished temperature drops by 1 degree for every 500 feet above sea level.  I'm at 1000 feet, so my jams finish at 218 F.) 7. Once the jam reaches gel stage, immediately remove it from the heat and pack it into jars leaving 1/4 inch headspace, and seal with 2 part canning lids 8. Store the apple jam in the refrigerator for immediate use, or process in a water bath canner for 10 minutes. Turn off the canner and allow the jars to sit an additional 5 minutes before removing them to a towel on the counter. Check for seals after a few hours, and store any unsealed jars in the refrigerator.
