NIGEL SLATER'S APPLE CRUMBLE RECIPE - BBC FOOD

Nigel Slater's apple crumble recipe - BBC Food image

Nigel Slater’s apple crumble balances tart Bramleys with an oat crumble topping that’s made extra crunchy by demerara sugar.

Provided by Nigel Slater

Prep Time 30 minutes

Cook Time 1 hours

Yield Serves 4

Number Of Ingredients 7

1kg/2lb 3½oz Bramley apples
pinch sugar, to taste
1 tbsp water or apple juice
100g/3½oz plain flour
75g/2½oz butter
50g/2oz rolled oats
100g/3½oz demerara sugar

Steps:

  • Preheat the oven to 200C/400F/Gas 6.
  • Wipe the apples and cut them into quarters, then remove the cores and slice each piece in two. Put them into a pan, taste a slice for sweetness and add a sprinkling of sugar accordingly. Add a tablespoon of water or apple juice and cook over a medium heat for about five minutes, until the apples start to soften.
  • Transfer the apple mixture to a shallow ovenproof pie dish.
  • Blend the flour and butter in a food processor for a few seconds, until the mixture looks like breadcrumbs.
  • Stir in the oats and the brown sugar and sprinkle over the cooked apples in the pie dish. Transfer to the oven to bake for 30 minutes or until crisp and golden-brown on top.

  • Preheat the oven to 190 C/Fan 170 C. For the topping, put the flour and butter into a food processor and pulse together until the mixture looks like coarse breadcrumbs. Alternatively, put the flour and cubed butter in a bowl and rub them together with your fingertips. You want the mixture to be clumpy rather than fine and dusty. Stir in 100g of the sugar.

Cut the rhubarb into 2.5cm pieces, put them in a bowl and add the rest of the sugar. Mix well and set aside for 15–20 minutes, stirring now and then, until slightly moistened.

Spread the fruit over the base of a shallow ovenproof dish and sprinkle over the topping. Bake for 45–50 minutes until the rhubarb is tender and the top is golden brown. Serve with some clotted cream.
