1/4 teaspoon nutmeg
1/2 cup butter
2/3 cup sugar
1 egg
1 teaspoon vanilla
2 tablespoons buttermilk
1 cup apple
1/2 cup nuts
1 cup chocolate chips

Steps:

  • In a small bowl, combine flour, salt, b. powder, baking soda, cinnamon, and nutmeg and set aside.
  • In a large bowl, beat butter and sugar until creamy. Add eggs and vanilla. Add flour mixture and buttermilk gradually. Stir in other ingredients.
  • Bake 15-20 minutes at 350.

1.75 cups all-purpose flour
4 tablespoons cocoa powder
1.333 cups light brown sugar
1 tablespoon Baking powder
0.25 cup sunflower oil
0.25 cup butter (melted)
2 eggs
0.75 cup milk
1 cooking Apple (peeled cored and diced)
0.5 cup white chocolate (coarsely grated)

Steps:

  • Heat the oven to 350ºF/180ºC/Gas 4. Grease 12 muffin tins.
  • Sift the flour, cocoa, sugar and baking powder into a mixing bowl.
  • Beat the oil and butter with the eggs and milk until combined. Stir lightly into the dry ingredients but don’t over mix; the mixture should be slightly lumpy. Fold in the apples.
  • Spoon into the muffin tins until three-quarters full.
  • Bake for 20-25 minutes until risen and golden and a skewer inserted into the middle come out clean. Cool in the tins for 5 minutes then place on a wire rack to cool.
  • Scatter the grated white chocolate over the top of the muffins.
