Poor Man's Apple Cobbler | Just A Pinch Recipes image

Have a dessert craving and not sure what to make? Try this super simple apple cobbler. Made with self-rising flour and canned pie filling, you probably already have the ingredients in your pantry. The pie filling is dolloped on top but the crust magically bakes around it. This comes out of the oven with a beautiful golden brown crust. You can use any fruit you'd like. We opted for apple but cherry or blueberry would be delicious too. If you like a lot of fruit, you can even add an extra can of filling to the cobbler. Serve with a scoop of ice cream for a delicious dessert.

Number Of Ingredients 6

1 cup(s) granulated sugar
1 cup(s) self-rising flour
1 can(s) pie filling (apple, cherry, or peach) or fresh fruit (21 oz)
1 stick(s) butter, unsalted
1 cup(s) milk
1 teaspoon(s) vanilla extract

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter in a 9x13 (preferably glass) baking dish. Do this by placing it in the oven while it preheats.
  • Mix sugar, flour, vanilla, and milk in a mixing bowl.
  • Pour mixture into baking dish over the butter. Do not mix with butter.
  • Spoon in apples or your fruit of choice in random spots.
  • Bake for 45 minutes.
  • The crust will rise around apples. Serve. Enjoy!

A good basic scone recipe with blueberries added . . . yummy!!

Number Of Ingredients 8

2 cups all-purpose flour
¼ cup packed brown sugar
1 tablespoon baking powder
¼ teaspoon salt
¼ cup butter, chilled
1 cup fresh blueberries
¾ cup half-and-half cream
1 egg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cut butter into mixture of flour, sugar, baking powder, and salt. Add blueberries and toss to mix.
  • In separate bowl beat together cream and egg, and slowly pour into dry ingredients, stirring with rubber scraper until dough forms. Knead just until it comes together, 3 or 4 times. Don't overhandle.
  • Divide dough in half. On lightly floured board, shape each half into a 6-inch round. Cut into 6 wedges.
  • Bake on ungreased sheet about 20 minutes at 375 degrees F (190 degrees C). Serve warm!!
