2 reduced-fat bacon slices
8 cups sliced, peeled Granny Smith apples (about 2 pounds)
2 tablespoons sugar

Steps:

  • Cook bacon in a large nonstick skillet over medium heat until crisp. Remove bacon from pan, reserving drippings in pan. Crumble bacon and set aside. Add apples and sugar to drippings in pan. Sauté 10 minutes or until the apples are golden. Stir in bacon.

8 slices smoked bacon
1 1/4 cups red onions, diced
4 apples, firm, diced
1 tablespoon garlic, minced
3 tablespoons sugar
3 tablespoons apple cider vinegar
1/2 tablespoon fresh thyme
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Saute bacon until crisp & remove from pan. Crumble & set aside. Remove all but 1 T. of bacon fat from pan. Add onions to pan & saute until starting to turn golden.
  • Add apples & garlic and saute 1 minute.
  • Add sugar & vinegar & reduce heat.
  • Cook 3-4 minutes or until apples are crisp tender. Add bacon.
  • Add seasonings & stir to combine.
