Apples and raisins are arranged over the top of a buttery cake before baking to make a beautiful and sweet dessert.

½ cup raisins
2 cups boiling water
½ cup butter or margarine, softened
1 cup white sugar
2 large eggs
¼ teaspoon almond extract
¾ cup milk
2 cups all-purpose flour
½ teaspoon salt
2 teaspoons baking powder
8 apples, peeled, cored and sliced
½ cup white sugar
½ cup melted butter or margarine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour two 9 inch round cake pans. Soak the raisins in boiling water while the oven preheats.
  • Cream together 1/2 cup butter or margarine with 1 cup sugar until fluffy. Beat in the eggs one by one, then add the almond extract and milk. Sift together the flour, salt, and baking powder; stir into the creamed butter to form a loose dough.
  • Divide the dough in half and press each half into the bottom of a prepared cake pan, bringing it slightly up the sides. Drain the raisins and scatter them over the dough. Arrange the apple slices in a spiral pattern over the raisins, overlapping slightly. Sprinkle with the remaining 1/2 cup of sugar and drizzle with 1/2 cup of melted butter or margarine.
  • Bake in preheated oven until apples are soft and the dough is lightly browned, about 30 minutes. Serve warm or at room temperature.

or Sunken Apple cake. This is based on a recipe my grandmother used. The apples are placed on top of the dough, which raises as baked, making the apples appear as if they have sunk into the cake.

2/3 cup soft butter or 2/3 cup margarine, plus some for the form
2/3 cup sugar
2 teaspoons vanilla sugar
1 pinch salt
2 -3 drops almond extract (optional)
2 eggs
1 cup flour
1 teaspoon baking powder
1/2 cup ground almonds (optional)
8 apples (approx.)
1 lemon, juice of (optional)
1/3 cup currants (optional)
1/4 cup slivered almonds (optional)
1 teaspoon icing sugar, for dusting

Steps:

  • Preheat oven to 350 degrees.
  • Beat the butter or margarine with a wooden spoon or mixer until creamy. Slowly add the sugar, together with the vanilla sugar, salt and almond extract, alternating with the eggs. Mix the dough until it is very foamy and the sugar has been thoroughly dissolved. Sift in the flour with the baking powder, add the ground almonds, and mix everything together quickly.
  • Carefully coat a springform with butter or margarine. Pour the batter in and smooth down the surface. Peel the apples, cut in half lengthwise, and remove the cores. Cut into the outer surface a few times with a knife, but don’t cut all the way through. Brush apples with the lemon juice. Place the apples close together onto the batter, core side down. Soak the currants for a short time in hot water, wash thoroughly and rub dry in a cloth. Sprinkle the currants, together with the slivered almonds over the apples. Bake the cake at 350 degrees for 75-80 minutes or until golden brown. Remove from the oven and let cool before dusting with icing sugar.
  • Serve with whipped cream.
  • Note: I always leave out the optional items as I find they don’t they add much to the flavour of the cake.

  • Preheat oven to 350°. Let egg yolks stand at room temperature for 30 minutes. Starting 1/2 in. from 1 end, cut apple halves lengthwise into 1/4-in. slices, leaving them attached at the top so they fan out slightly. Set aside., Cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. In another bowl, sift flour, cornstarch, cream of tartar, baking powder and salt twice. Gradually beat into creamed mixture. Add milk; mix well (batter will be thick)., Spread batter into a greased 9-in. springform pan wrapped in a sheet of heavy-duty foil. Gently press apples, round side up, into batter. Apfelkuchen is a german apple cake or pie-like dish. It is one of those recipes where every family has a different recipe so there are hundreds of different recipes. This was a recipe that I found on the internet many, many years ago for a project in German class in high school and have not found one similar to it anywhere. I LOVE this Apfelkuchen and being of mostly German heritage I love it even more! It is more of a custard type pie but it is by far one of the best apple dishes I have ever had! I always make sure to make it every year when apples are in season!

  • Place pie shell in a round cake pan (not a pie pan). Toss apples with cinnamon and place in pie shell. Cream 2 tablespoons butter, sugar, and eggs together. Add salt, vanilla, and cream cheese. Blend until just smooth and pour over apples. Combine brown sugar, flour, and 2 tablespoons butter, add pecans. Crumble this mixture on top of pie. Bake at 375 degrees for 45 minutes. Reduce heat to 350 degrees and continue to bake for 15 minutes. Allow to cool and serve.

This recipe takes me back over 50 years when I lived in Germany. My landlady Mathilda would treat me to this pastry and one day I asked her for the recipe. She agreed to show me how to make it, if I taught her how to make American lemon meringue pie! So she taught me how to make it with her metric utensils while I recorded the amounts in equivalent U.S. weights and measures; then I reciprocated making the pie. We were each pleased for such a fun multi-national cooking session, and I have made this recipe ever since, especially in the fall/winter when many apples are in season.   • Set oven to 350 degrees. Grease or spray a 9" x 13" baking dish and set aside (I used a glass oven-proof dish and I reduced the oven to 325 degrees to prevent scorching). Pare apples and core. Cut large apples each into 6 segments, i.e., cut in half and cut each half into thirds. (Cut medium size apples into quarters.) Beat the butter with granulated sugar creaming until light and fluffy. Beat in the eggs and vanilla extract. Add the flour, baking powder and salt alternately with the milk to the creamed mixure in 3 additions each. Stir in half of the raisins. Spread batter in prepared baking dish. Arrange apple wedges throughout, pushing them down into batter. Sprinkle top with remaining half of raisins. Bake 25-35 minutes til golden brown or until toothpick tests clean in center of cake. Cool in the pan on wire rack. To serve, sift powdered sugar over top of entire cake, or on top of individual servings. NOTE: For a variation of flavors, try this Almond Apple Cake version (see last photo): Omit lemon extract and substitute 1/2 teaspoon almond extract. Omit raisins if desired. After baking drizzle a powdered sugar glaze over the top and sprinkle sliced almonds on top.
