4 1/2 ounces mung bean noodles
2 ounces soy sauce
1 tablespoon rice wine
1 tablespoon sambal chili paste
1 teaspoon cornstarch
10 ounces ground pork
1 tablespoon canola oil
4 green onions, chopped, divided
1/2 cup chicken broth

Steps:

  • Soak the noodles in enough hot water to cover by 1 inch for 20 minutes. Use kitchen shears to cut the noodles into 3 to 4-inch pieces and drain thoroughly in a colander for 10 minutes.
  • Combine the soy sauce, rice wine, and chili paste in a medium bowl and whisk until smooth. Add the cornstarch and whisk until combined. Add the pork and mix until thoroughly integrated. Set aside for 30 minutes.
  • Place a 12-inch saute pan over high heat for 1 minute. Add the oil and swirl to coat the bottom and sides of the pan. Once the oil shimmers, add the meat mixture. Stir constantly for 2 minutes, breaking the meat up into very small pieces. Add 2/3 of the green onions and continue cooking and stirring until the meat is well browned and in very small pieces, approximately 2 minutes. Reduce the heat to medium-high and add the broth. Cook until reduced, approximately 3 minutes.
  • Slowly add handfuls of the noodles to the pan, tossing with the meat mixture until combined and the pieces of meat cling to the noodles and no liquid remains. Serve immediately with the remaining green onions.

Ants on the tree, also known as minced pork vermicelli, is one of the characteristic traditional dishes in Sichuan and Chongqing, and belongs to Sichuan cuisine. The minced meat sticks to the vermicelli and looks like an ant crawling on the branch, hence the name.

200 g Lean meat
250 grams Sweet potato flour
3 petals garlic
2 pieces shallot
Right amount Cooking oil
2 scoops Soy sauce
2 scoops Doubanjiang
Right amount pepper powder

Steps:

  • Put the vermicelli in a basin and soak it with hot water until it can be easily broken off. Use a colander to pick up the vermicelli and put it in a bowl. Wash the lean meat, cut into granules, and serve on a plate for later use. Process the onion and garlic into small pieces and crumbles for later use.
  • Wash the pot and boil dry. Pour in the appropriate amount of cooking oil and heat, then pour in the meat and bean paste and stir fry. At the same time, pour in the appropriate amount of soy sauce and pepper powder to mix and season.
  • Follow the above steps, pour in the vermicelli, stir fry, add appropriate amount of water to simmer according to the softness of the vermicelli. At the same time, add appropriate amount of soy sauce and salt to mix and season. When the soup is basically boiled dry, take it out of the pot and serve it on a plate.
  • Sprinkle a handful of chopped green onion on the plated vermicelli, and the fragrance of green onion will instantly puff your nose, so that a plate of freshly baked ants will be born on the tree!

Set aside. Add doubanjiang, minced garlic, sliced ginger and chopped shallot in wok and stir-fry over medium fire until the oil turns red and aromatic. Return pork to wok and add soy sauce. Mix well. Pour water and bring everything to boil. Add soaked vermicelli and sugar, and stir-fry to mix everything well. There is no need to cook off all the liquid as the vermicelli continues to adsorb liquid after transferring out of the wok. Sprinkle chopped green onions and serve hot.
