Angel Hair Pasta Salad Recipe: How to Make It image

This is a refreshing angel hair pasta salad that keeps a summer kitchen cool. It's a tasty way to get my family to eat their vegetables. —Janette Garner, Carmel, Indiana

Number Of Ingredients 9

1 package (7 ounces) angel hair pasta
4 plum tomatoes, seeded and chopped
1 cup thinly sliced carrots
1 medium cucumber, chopped
6 green onions, thinly sliced
2 tablespoons olive oil
2 tablespoons cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. Place in a large bowl; add the tomatoes, carrots, cucumber and onions. , In a small bowl, whisk together the oil, vinegar, salt and pepper. Pour over pasta mixture and toss to coat. Cover and refrigerate for 4 hours.

Ok, so I know it's not a pic of an actual Angel Salad, but since I didn't have one yet, this is my youngest grandbay enjoying his first taste. This salad is something I have been making since my kids were small. It's the one thing they both request for Holidays & family dinners. You can double the recipe really well. I'll post an actual pic the next time I make this.

8 ounce(s) cream cheese, room temperature
1/2 cup(s) chopped pecans
1/2 cup(s) sugar
1 teaspoon(s) vanilla extract
1 - 9 oz tub cool whip
1 can(s) (lg) crushed pineapple

Steps:

  • Beat cream cheese until smooth and creamy.
  • add pecans, sugar, vanilla and pineapple. Mix well.
  • fold in coolwhip. Refrigerate until ready to serve. I prepare the night before I'm ready to serve.

  • Sprinkle in the McCormicks Supreme Salad seasoning, using approximaly 3/4 of the bottle. Add the parmesan cheese and toss all ingredients. Pour in enough garlic dressing to moisten the salad good (which requires most of the dressing) but do not oversaturate the salad. You can always add more later after it has chilled. The pasta will soak up some of the dressing. Chill at least 4 hours or longer. It is even better the next day. Enjoy! *You can buy this dressing online (garlic-expressions.com) or substitute another good vinaigrette or italian dressing.
