Angel hair pasta is light in texture and quick cooking. Dress it simply with garlic, olive oil, and butter, then top it with marinated tomatoes, if you like!

Salt, plus more for serving 
2 tbsp. butter
2 tbsp. olive oil
1 clove garlic, chopped
8 oz. angel hair pasta
3 tbsp. grated parmesan cheese, plus more for serving
1 tbsp. chopped parsley, plus more for serving
1 tbsp. chopped basil, plus more for serving
1 c. grape tomatoes, halved
1 garlic clove, finely chopped
1/2 tsp. salt
1/8 tsp. crushed red chili flakes, optional
1 tbsp. olive oil
1 tsp. red wine vinegar

Steps:

  • Bring a medium pot full of water to a boil over high heat. Season the water generously with salt.
  • Heat a medium skillet over medium heat. Add the butter and melt until bubbly and light golden brown. Reduce heat to low, then add the olive oil and garlic. Cook for 1 minute until fragrant. Remove from the heat and set aside.
  • Break the pasta in half and add to the boiling water; cook for 2 minutes. Reserve 3/4 cup of the pasta water then drain the pasta. Immediately add the cooked pasta to the skillet and return to the stove over low heat. Add the pasta water and mix well to combine. Add the parmesan , parsley, and basil, and stir gently to combine. Remove from the heat and serve, topped with marinated tomatoes, more fresh herbs and grated parmesan, if desired.
  • For the marinated tomatoes (optional): Before cooking the pasta, combine the grape tomatoes, garlic, salt, chili flakes, olive oil and red wine vinegar in a bowl. Let rest for 10 minutes.

1 pound angel hair pasta
1/2 cup Chili Oil, recipe follows
1/2 cup chopped fresh Italian parsley leaves
1 lemon, juiced
2 tablespoons lemon zest
Coarse sea salt
Dried crushed red pepper flakes
1/2 teaspoon grated lemon peel, optional
2/3 cup freshly grated Parmesan
2 cups olive oil
4 teaspoons dried crushed red pepper flakes

Steps:

  • Bring a large pot of salted water to a boil. Add the angel hair pasta and cook until tender but still firm to the bite, stirring occasionally, about 6 to 8 minutes. Drain, reserving 1 cup of the pasta water.
  • Stir the oil, parsley, lemon juice and lemon peel in a large serving bowl. Add the cooked pasta and toss with enough reserved pasta water, 1/4 cup at a time, to moisten. Season the pasta with salt and red pepper flakes, to taste. Sprinkle grated lemon peel over pasta for extra flavor and texture. Sprinkle with the Parmesan and serve.
  • Combine the oil and crushed red pepper flakes in a heavy small saucepan. Cook over low heat until a thermometer inserted into the oil registers 180 degrees F, about 5 minutes.
  • Remove from heat. Cool to room temperature, about 2 hours. Transfer the oil and pepper flakes to a 4-ounce bottle. Seal the lid. Refrigerate up to 1 month.
  • Yield: 2 cups
