Fast Tomato Sauce With Anchovies Recipe - NYT Cooki… image

Despite their reputation, anchovies are not overpowering, at least once cooked. Used with garlic as the start of a fast pasta sauce, they dissolve almost instantly and add a mysteriously meaty complexity that makes the sauce seem as if it had simmered for hours. Tossed with linguine and arugula, they make a simple dish sophisticated. If you're feeding a crowd, it doubles or triples beautifully.

Yield enough for 1 pound of pasta, about 4 servings

Number Of Ingredients 5

2 tablespoons extra virgin olive oil
1 teaspoon minced garlic
4 to 6 anchovy fillets, with some of their oil
1 28-ounce can tomatoes, crushed or chopped and drained of their juice
Salt and fresh-ground black pepper

Steps:

  • Put the olive oil in a deep skillet, and turn the heat to medium. A minute later, add the garlic and the anchovies, and stir. When the garlic sizzles and the anchovies break up, add the tomatoes.
  • Turn heat to medium-high, and bring to a boil. Cook, stirring occasionally, until mixture becomes saucy, about 15 minutes. Season to taste, and serve with spaghetti or other long pasta. Grated pecorino Romano cheese goes well with this sauce.

1 medium yellow onion
3 large cloves garlic
1 (1-inch) piece ginger
1 small lemon
5 large anchovies in oil (from a 2-ounce can)
1 tablespoon anchovy oil from can
1/4 cup tomato paste
1 1/4 cups malt vinegar or apple cider vinegar
3/4 cup water, plus more as needed
1/2 cup raisins
1/3 cup granulated sugar
1/3 cup molasses (not blackstrap)
1/3 cup tamarind concentrate
1 tablespoon celery salt, plus more as needed
1 teaspoon ground cloves
3/4 teaspoon freshly ground black pepper
3/4 teaspoon curry powder
1/4 teaspoon cayenne pepper (optional)

Steps:

  • Peel and coarsely chop 1 medium yellow onion, 3 large garlic cloves, and 1-inch piece fresh ginger. Finely grate the zest of 1 small lemon. Juice the lemon until you have 1 tablespoon juice. Finely chop 5 large anchovies.
  • Heat 1 tablespoon anchovy oil in a medium saucepan over medium-high heat until shimmering. Add the onion, garlic, and ginger, and cook, stirring occasionally, until caramelized and slightly softened, about 8 minutes. Add the anchovies and 1/4 cup tomato paste, and cook, stirring occasionally, until anchovies are fragrant, about 1 minute.
  • Add 1 1/4 cups malt or apple cider vinegar, 3/4 cup water, 1/2 cup raisins, 1/3 cup granulated sugar, 1/3 cup molasses, 1/3 cup tamarind concentrate, 1 tablespoon celery salt, 1 teaspoon ground cloves, 3/4 teaspoon ground black pepper, 3/4 teaspoon curry powder, and 1/4 teaspoon cayenne pepper if using. Bring to a simmer over medium-low heat. Simmer, stirring occasionally, until well combined and very fragrant, 15 minutes. Remove the saucepan from the heat. Add the lemon zest and stir to combine. Let sit for 10 minutes to cool slightly and let the flavors meld.
  • Transfer the sauce to a blender and purée until smooth. Pour through a fine-mesh strainer set over a medium bowl or jug, pressing and stirring with a rubber spatula to push the liquid through. This may take up to 10 minutes, as the sauce is very thick at this stage. Discard the solids in the strainer.
  • Add the lemon juice and stir to combine. Taste and season with more celery salt as needed. If you feel the sauce is a little too thick, whisk in 1 to 2 tablespoons water to loosen.

In this dish, the cut of chicken is less important than the pungent pan sauce. Most people will probably want to use the workhorse of all poultry dinners, the boneless, skinless breasts. But the thighs cook nearly as quickly, and have a greater margin of error in terms of doneness. Overcook your breasts by even a minute, and you’ll get dry, tough meat. Thighs are more forgiving. However, if your family insists on white meat, you can substitute breasts and subtract about 3 minutes from the cooking time. There is no need to mention the anchovies until after people have complimented you on the meal.

    1. First make the pangrattato. Put 6 tablespoons of oil into a hot thick-bottomed pan.
    2. Peel, slice and add the garlic, strip in the thyme leaves and breadcrumbs; they will fry and begin to toast. Stir for a couple of minutes, or until the breadcrumbs are really crisp and golden. Season with a little sea salt and black pepper and drain on kitchen paper.
    3. Cook the spaghetti in boiling salted water until al dente. While it is cooking, peel and finely chop the garlic, then heat gently in a pan with 4 tablespoons of oil.
    4. As the garlic begins to soften, lay the anchovy fillets over the top. After a minute you will see them begin to melt.
    5. Squeeze in the lemon juice and crumble in the dried chillies.
    6. Drain the spaghetti and throw it into the sauce. Taste a bit of pasta – it may need a little more lemon juice and a little extra seasoning. Serve straight away, sprinkled really generously with the pangrattato.
