Cookie
1 cup Land O Lakes® Butter softened
3/4 cup sugar
1 large Land O Lakes® Egg
1 teaspoon almond extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
Frosting
2 cups powdered sugar
2 tablespoons Land O Lakes® Butter softened
1 teaspoon almond extract
2 to 3 tablespoons warm water
Toppings
1 (5-ounce) can mixed nut topping *
Decorator sugars, if desired

Steps:

  • Combine 1 cup butter and sugar in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg and 1 teaspoon almond extract; continue beating until well mixed. Add all remaining cookie ingredients. Beat at low speed until well mixed.
  • Divide dough in half; flatten slightly. Wrap each half in plastic food wrap. Refrigerate 1 hour until firm.
  • Heat oven to 375°F.
  • Roll out dough, one-half at a time on lightly floured surface (keeping remaining dough refrigerated), to 1/8-inch thickness. Cut with 3-inch tree cookie cutter. Place 1 inch apart onto ungreased cookie sheets.
  • Bake 6-7 minutes or just until edges begin to lightly brown. Cool 1 minute on cookie sheet. Remove to cooling rack. Cool completely.
  • Combine powdered sugar, 2 tablespoons butter and 1 teaspoon almond extract in small bowl. Beat at low speed until well mixed. Continue beating, adding enough water for desired glazing consistency. Frost 1 cookie at a time; immediately sprinkle each with nut topping and decorator sugars, if desired.

1 cup butter or margarine, softened
1/2 cup granulated sugar
1/2 teaspoon almond extract
2 cups Gold Medal™ all-purpose flour
1 cup powdered sugar
2 tablespoons butter or margarine, softened
1 to 2 tablespoons milk
8 or 10 drops green food color

Steps:

  • Heat oven to 350°F. In medium bowl, beat 1 cup butter, the granulated sugar and almond extract with electric mixer on medium speed until smooth. On low speed, beat in flour.
  • Shape dough into 1-inch balls; place 2 inches apart on ungreased cookie sheets.
  • Bake 12 to 15 minutes or until firm to the touch. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely, about 30 minutes.
  • In small bowl, beat powdered sugar, 2 tablespoons butter and the milk on medium speed until smooth and spreadable. Stir in green food color until uniform color.
  • Spoon frosting into resealable food-storage plastic bag. Seal bag; cut off tiny corner of bag. Squeeze bag to make tree shape in a zigzag pattern on each cookie with frosting.

My favorite entrée at the Nut Tree Restaurant (before it closed in ‘96) near Vacaville CA was Chicken Almond. (The gift shop at The Nut Tree sold the restaurant’s most popular recipes, which is how I came by them.) This makes a good summertime recipe because it’s a one-skillet meal that cooks in a flash and won’t heat up the kitchen. I have stayed fairly close to the original recipe, but did take some liberties that I thought would enhance it, i.e., the original recipe called for French-fried blanched almonds, but I decided browning or toasting them would be better than deep frying. A few other recipe tweaks were made too, but all in all, this is that great Chicken Almond I remember so well! (Oh yeah, cashews would make a wonderful sub for the almonds!)

  • Heat 1 ½ teaspoons of the oil in large skillet over medium low heat. Add almonds and cook, stirring occasionally until lightly browned (or toast them instead without oil.) Remove almonds from pan and set aside. Increase heat to medium or medium-high and add remaining 2 tablespoons of oil to pan. Brown chicken cubes in hot oil and sprinkle with the kosher salt (add additional oil if needed to prevent sticking.) Add celery, onions, bamboo shoots, water chestnuts and water (or reserved juice.) Cover, reduce heat and cook about 7 minutes. Scatter sugar peas on top; cover and cook 5 minutes longer.
