Cranberry Almond Biscotti Recipe | Allrecipes image

I modified a recipe to make this a darker biscotti. For a richer almond flavor, use almond extract instead of the vanilla.

Prep Time 30 minutes

Cook Time 50 minutes

Yield 30 cookies

Number Of Ingredients 9

2?¼ cups all-purpose flour
1 cup white sugar
1 teaspoon baking powder
½ teaspoon baking soda
2 egg whites
2 eggs
1 tablespoon vanilla extract
¾ cup sliced almonds
1 cup sweetened-dried cranberries

Steps:

  • Preheat oven to 325 degrees F (170 degrees C).
  • Combine dry ingredients in a medium sized mixing bowl. Whisk together eggs, egg whites, and vanilla or almond extract in a separate mixing bowl.
  • Add egg mixture to dry ingredients, mixing just until moist, using an electric mixer on medium speed. Add dried cranberries and almonds; mix thoroughly.
  • On floured surface, divide batter in half and pat each half into a log approximately 14 inches long and 1 1/2 inches thick. Place on a cookie sheet and bake 30 minutes or until firm. Cool on a wire rack about 10 minutes, or until cool enough to handle.
  • Cut biscotti on the diagonal into 1/2-inch slices. Reduce oven temperature to 300 degrees F (150 degrees C). Place cut biscotti upright on a cookie sheet, spacing them about an inch apart, and bake for an additional 20 minutes. Let cool and store in a loosely covered container.

CRANBERRY AND ALMOND RICE PILAF RECIPE | ALLRECIPES

Cranberry and Almond Rice Pilaf Recipe | Allrecipes image

I've been making this dish for years - it's different from typical rice pilaf dishes in that the cranberries add the sweetness and the tartness that you don't expect in a savory dish. Oh, and it's super hard to fumble.

Total Time 45 minutes

Prep Time 15 minutes

Cook Time 30 minutes

Yield 8 servings

Number Of Ingredients 10

1 tablespoon olive oil
¾ cup chopped onions
½ cup dried cranberries
1?½ cups uncooked jasmine rice
3 cups low-sodium chicken broth
1 teaspoon kosher salt, or to taste
ground black pepper to taste
2 green onions, chopped
3 tablespoons chopped fresh cilantro
¼ cup slivered almonds

Steps:

  • Heat olive oil in a large skillet or Dutch oven over medium heat. Cook and stir onion in hot oil until tender and translucent, about 5 minutes.
  • Stir cranberries and jasmine rice into onion until rice is coated with oil and rice is lightly toasted, about 5 minutes more.
  • Pour chicken broth into skillet and season with kosher salt and black pepper.
  • Bring rice mixture to a boil over high heat, then cover and reduce heat to low. Simmer until rice is tender and liquid is absorbed, about 22 minutes.

CRANBERRY COOKIES RECIPE WITH ALMONDS | SOUTHERN LIVING
Studded with dried cranberries and toasted almond slices and flavored with almond extract, these tasty drop cookies are a snap to make. They go from the mixing bowl to your plate in just 20 minutes—perfect for satisfying sudden homemade dessert cravings or last-minute bake sale requests.Because they are made with everyday pantry ingredients, Cranberry-Almond Cookies are a great year-round cookie jar staple, but we especially love them around the holidays because the cranberries add a festive splash of red to any Christmas cookie tin. Plus, the recipe makes three and a half dozen cookies, so you'll have plenty for cookie exchanges, parties, and gift-giving, and more than a few leftover for yourself! While the recipe is delicious as-is, it's also very adaptable if you would like to change it up a bit. Add a little orange zest to the batter for a bright note that works well with the dried cranberries and almonds. Or lose the cranberries completely and replace them with raisins or chopped dried apricots. The slivered almonds can be replaced with chopped pecans, walnuts, or pistachios (for red-and-green Christmas cookies). To tone down the almond flavor, you can swap out the almond extract for vanilla extract. However you choose to make these delightfully easy cookies, we know you'll love them.

CRANBERRY-ALMOND BROCCOLI SALAD RECIPE | MYRECIPES
Broccoli salad is usually drowning in a creamy, often very sweet, dressing and studded with 1/2 pound crumbled bacon, making it more about the creamy dressing and bacon than about the actual broccoli. Ours uses a combination of canola mayonnaise and Greek yogurt to keep the calories in check. We opt for center-cut bacon (a bit less of it) and swap the usual raisins for lower-sugar dried cranberries to pack a subtle punch of tart. The best part of this salad? The longer it sits, the better it gets.
