Pimiento and Cheese Spread Recipe: How to Make It image

This pimiento and cheese spread is a spicy, modern version of my mother's delicious recipe. Serve it stuffed in celery or spread on crackers or a sandwich. —Elizabeth Hester, Elizabethtown, North Carolina

12 ounces sharp white cheddar cheese
8 ounces reduced-fat cream cheese, softened
2 teaspoons Worcestershire sauce
2 teaspoons white vinegar
1/4 teaspoon white pepper
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1 jar (4 ounces) diced pimientos, undrained
Assorted crackers and vegetables

Steps:

  • Shred the cheddar cheese; transfer to a large bowl. Add cream cheese, Worcestershire sauce, vinegar, pepper, garlic powder and cayenne; beat on low speed until blended. Drain pimientos, reserving 2 tablespoons juice. Stir in pimientos and reserved juice. Serve with crackers and vegetables.

Yield 2 cheese balls (4 cups).

Number Of Ingredients 14

1 package (8 ounces) cream cheese, softened
1/2 cup sour cream
2 cups shredded Swiss cheese
2 cups shredded sharp cheddar cheese
1 cup crumbled cooked bacon (about 12 strips), divided
1/2 cup chopped pecans, toasted, divided
1/2 cup finely chopped onion
1 jar (2 ounces) diced pimientos, drained
2 tablespoons sweet pickle relish
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup minced fresh parsley
1 tablespoon poppy seeds
Assorted crackers

Steps:

  • In a large bowl, beat cream cheese and sour cream until smooth. Stir in shredded cheeses, 1/2 cup bacon, 1/4 cup pecans, onion, pimientos, pickle relish, salt and pepper. Refrigerate, covered, at least 1 hour., In a small bowl, mix parsley, poppy seeds and remaining bacon and pecans. Spread half the parsley mixture on a large plate. Shape half the cheese mixture into a ball; roll in parsley mixture to coat evenly. Cover. Repeat. Refrigerate at least 1 hour. Serve with crackers.

  • Chocolate Swiss Roll Sponge Rub some butter around the inside of a 20x30cm/8x12" baking tray or insert a cake liner. Pre-heat the oven. Measure the flour and cocoa into a bowl and stir to combine. Put the eggs and sugar into a mixing bowl and beat together until pale. Sieve the prepared flour and cocoa into the bowl and mix using a metal spoon in a cutting and folding action. Take care not to over mix. Pour the mixture into the prepared tin, spreading it out to the edges. Bake for 10-12 minutes. Spread a clean tea towel over the baking tin, place a chopping board on top and invert everything together. Remove the baking tin, and cake liner if used, to leave the sponge on the tea towel. Using the tea towel for support, roll the long edge of the sponge into a cylinder with the cloth inside. Leave the cloth and sponge cylinder to cool completely. Filling and Topping Spoon the icing sugar and cocoa into a bowl and stir to combine. Put the cream into a mixing bowl and beat until nearly thick. Sieve two teaspoons of the prepared sugar into the cream and stir to combine. Gently unroll the cold sponge and roll it up again from the opposite long side. Once again, gently unroll the sponge and carefully spread the cream mixture all over the inside. Roll the sponge up again without the tea towel. Dust the remaining sugar and cocoa mix over the cake.

The trick to great grilled cheese sandwiches isn’t in the ingredients, but on the stove. Achieving a golden, crusty outside and oozy inside takes a little patience: if the heat is too high, the outside will scorch before the cheese melts. Cooking the slices separately at first gives the cheese a good head start.
