1/3 cup dry white wine
2 tablespoons cider vinegar
2 tablespoons shallots
1 sprig thyme, finely chopped
1 bay leaf
1/3 cup creme fraiche
5/8 cup unsalted butter, cold cut into 10 pieces
2 tablespoons chives, chopped fresh
fresh lemon juice
36 ounces halibut fillets (each about 3/4 to 1 inch thick)
2 tablespoons vegetable oil
2 tablespoons unsalted butter
1/4 cup fine fresh breadcrumb
2/3 cup almonds, finely chopped blanched
1 large egg, beaten lightly

Steps:

  • For beurre blanc: In a small heavy saucepan boil wine, vinegar, shallot, thyme, bay leaf and pepper to taste until liquid is evaporated.
  • Add crème fraîche and boil until reduced by half.
  • Reduce heat to low and whisk in butter, 1 piece at a time, lifting pan off heat occasionally to cool mixture and adding each new piece before previous one has melted completely. (Do not allow sauce to simmer; it should not get hot enough to separate.)
  • Strain sauce through a fine sieve into a heatproof bowl and add chives, lemon juice, and salt and pepper to taste.
  • Keep beurre blanc warm by setting bowl in a larger pan of very warm water.
  • For the halibut: Preheat broiler.
  • Pat halibut fillets dry and season with salt and pepper.
  • In a large non-stick skillet heat oil and 1 tablespoon butter over moderately high heat until foam subsides and sauté fillets in 2 batches 2 to 3 minutes on each side, or until golden and just cooked through.
  • Transfer fillets as cooked with a slotted spatula to a baking sheet and cool 5 minutes.
  • In a small bowl with a fork stir together breadcrumbs, almonds and remaining tablespoon butter.
  • Brush tops of fillets with egg and spread with almond mixture.
  • Broil fillets about 3 inches from heat 1 to 2 minutes, or until browned.
  • Arrange a fillet on each of 6 plates and spoon beurre blanc around it.

Cooking fish at home can be a welcome alternative for those who are stuck in a chicken and pasta rut (ahem, me, ahem...), and it's not as scary as it seems. This recipe is inspired by a delicious dish my dad makes back home in California. The almonds add a crunchy, nutty flavor to the flaky halibut and the addition of a little honey mustard gives an unexpected hint of sweetness. Number Of Ingredients 11

1/4 cup sliced almonds, chopped finely
1/4 cup plain breadcrumbs
salt and fresh black pepper, to taste
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
chile flakes, to taste
1 egg
1 tablespoon honey mustard
1 pound halibut fillet
1 tablespoon olive oil
1/2 tablespoon butter

Steps:

  • Preheat the oven to 350 degrees.
  • In a small bowl, combine the almonds, breadcrumbs, salt, pepper, herbs, and chile flakes. Mix together to combine. Spread the mixture evenly on a plate.
  • In another bowl, whisk the egg. Add the honey mustard and whisk again to combine.
  • Dip the halibut in the egg mixture and coat both sides of the fillet. Then, evenly coat the fillet with the breadcrumb and almond mixture.
  • Heat the olive oil and butter in a cast-iron pan or other oven-safe frying pan. Brown one side of the fish over medium heat for about 2 minutes. Flip the fillet and place the pan in the oven. Cook for 8-10 minutes, checking at regular intervals after 5 minutes to make sure the fish doesn't dry out.
  • Remove from oven and serve immediately.

  • Lemon Butter Blend lemon juice, lemon zest, butter, garlic, and parsley together. Set it aside to top the halibut later. Halibut Wash and dry the halibut filets Add salt, pepper, paprika, and oil to the skin side of the halibut. Flip over and do the same. Generously slather the lemon butter mixture onto each filet. Top the lemon butter with almond flour and gently pat it down to allow the almond flour to stick to the butter. Place the halibut filets onto a roasting pan and put them into a 425-degree oven for 7 minutes. I recommend a roasting pan like THIS one. Change the oven temperature to HIGH BROIL and broil for 5 minutes. You can add an additional 2 minutes if you want the top layer to be extra brown, but DO NOT COOK OVER THIS TIME.
