1/2 cup panko bread crumbs
1/4 cup Fisher® Chef’s Naturals Sliced Almonds
1/4 cup shredded parmesan cheese
1/2 teaspoon oregano
1/4 teaspoon garlic powder
2 teaspoons olive oil
1 1/2 pound cod fillets, preferably at least 1 inch think, cut into 4 - 6 oz. portions

Steps:

  • Preheat the oven to 375°F. Line a rimmed baking sheet with aluminum foil.
  • Combine panko, almonds, cheese, oregano, garlic powder and olive oil in a small bowl.
  • Place cod filets onto prepared pan. Press almond mixture onto top of pieces. Bake until internal temperature reaches 145°F on a food thermometer or cook until flesh is opaque and separates easily with a fork, 12 to 14 minutes.
