My Grandmother-In-Law gave me this recipe because so many of our family have celiac disease or are allergic to wheat. I love it so much, that I now use it for all of my pies. If you don't like almonds, you can use any other nuts instead

Yield 1 pie crust

Number Of Ingredients 6

1/3 cup butter
1/4 cup brown sugar
1/4 teaspoon xanthan gum
3/4 cup rice flour
1/2 teaspoon vanilla
1/3 cup chopped almonds

Steps:

  • Combine brown sugar, Xanthun, Rice Flour, Vanilla and Almonds in a medium mixing bowl.
  • Cut in butter with pastry cutter or fork.
  • Spread the mix into a nine inch pie pan and shape with fingers or bottom of a spoon to cover the bottom and sides.
  • Bake for 15 minutes in oven at 350 degrees.
  • Let cool.
  • Pour in filling or use in place of graham cracker crusts.

This almond flour pie crust is an excellent option for a gluten-free pie crust. With options to make it sweet or savory, it is perfect for all varieties of pies.

Number Of Ingredients 11

2 1/2 cup(s) blanched almond flour (see notes)
1 tblsp stevia or sweetener of your choice
1/4 cup(s) melted butter
2 eggs
1 tblsp butter, for brushing
2 1/2 cup(s) blanched almond flour (see notes)
1 tsp salt
1 tblsp oregano
1/4 cup(s) melted butter
2 eggs
1 tblsp butter, for greasing

Steps:

  • Preheat the oven to 350°F. Measure and prep all ingredients.
  • In a mixing bowl, combine almond flour, stevia (for the sweet crust) or salt and oregano (for the savory crust).
  • Whisk the eggs in a small bowl. Mix in 4/5th of the eggs to the almond flour mixture and reserve the remaining 1/5th for later.
  • Stir in the melted butter and egg and mix until well combined.
  • Grease the bottom of a 9-inch round pie pan with butter. Press the dough into the bottom and up the sides of the pie pan. Crimp the edges.
  • Brush the pie crust with the reserved egg. Bake at 350°F for 10-12 minutes until lightly golden.
  • Fill your pie crust with your favorite filling and enjoy!
