Better Than Olive Garden Alfredo Sauce Recipe - Food.c… image

This is the best Alfredo sauce ever. This is several recipes combined into one. You can also add your choice of meat (chicken, shrimp or even crab). The closest OLIVE GARDEN is an hour away and I will never drive that far again just for Alfredo sauce. I promise this is the best sauce ever. Definitely a dish you would want to impress your guest with.

Number Of Ingredients 10

3 tablespoons sweet butter
2 tablespoons olive oil
2 garlic cloves, minced
2 cups heavy cream
1/4 teaspoon white pepper
1/2 cup grated parmesan cheese, plus more for garnish
3/4 cup grated mozzarella cheese
1 (12 ounce) box angel hair pasta (or fettuccini)
2 tablespoons chopped parsley, for garnish (optional)
freshly cracked black pepper, for garnish (optional)

Steps:

  • Melt butter in medium saucepan with olive oil over medium/low heat.
  • Add the garlic, cream, white pepper and bring mixture to a simmer.
  • Stir often.
  • Add the Parmesan cheese and simmer sauce for 8-10 minutes or until sauce has thickened and is smooth.
  • When sauce has thickened add the Mozzarella cheese and stir until smooth. STIR FREQUENTLY.
  • While the sauce cooks, boil noodles for 3-5 minutes.
  • Place pasta on serving plates and spoon sauce over pasta.
  • Garnish with parsley, freshly cracked black pepper and more grated parmesan (optional).

2 tbsp. extra-virgin olive oil
2 boneless skinless chicken breasts
Salt
Freshly ground black pepper
350 mL whole milk
350 mL chicken stock
2 cloves garlic, crushed
200 g fettuccini
120 mL double cream
100 g freshly grated Parmesan
Freshly chopped parsley, for garnish 

Steps:

  • In a large pan over medium-high heat, heat oil. Add chicken and season with salt and pepper. Cook until golden and cooked through, 8 minutes per side. Let rest 10 minutes, then slice.  Add milk, stock, and garlic to pan. Season with salt and pepper and bring to a simmer. Add fettuccine, stirring frequently for about 3 minutes. Let cook until al dente, 8 minutes more.  Stir in double cream and Parmesan until combined. Simmer until sauce thickens.  Remove from heat and stir in sliced chicken. Garnish with parsley.
