PRAWNS WITH GARLIC (GAMBAS AL AJILLO) - THE HAPPY FOODIE
Pink, deliciously plump prawns fried in a glossy garlic olive oil - what more could you want?! This tapas dish can be round in bars across Spain for a good reason! Best enjoyed in the sunshine with a glass of crisp, white wine.

Steps:
Peel the prawns, leaving their tails intact (if you are using a frying pan you can cook the prawns in their shells). Sprinkle with a little sea salt.
Put the olive oil, garlic and chillies in the terracotta pot of frying pan and place over a high heat. When the garlic starts to turn golden, add the prawns. Cook for 1 minute on each side, until they just turn pink. Sprinkle over the chopped parsley and serve immediately in the terracotta pot. Take care not to burn yourself as the oil and the terracotta will stay hot for several minutes.

Steps:
- Pour the olive oil into a large, deep frying pan and set over a low-medium heat until 100°C or just shimmering, then add ?the chilli flakes, the crushed garlic cloves, the large chopped tomatoes and a squeeze of lemon juice. Fry for 5 minutes until the garlic is sizzling and fragrant but not too brown.
- Turn up the heat slightly, then add the king prawns. Fry for 3 minutes until pink and cooked. Serve with crusty bread.
