Crispy Air Fryer Potato Skins - Air Fry Anytime image

These delicious potato skins get extra crispy in the air fryer and are piled up with melted cheese, bacon and onion for a tasty tasty snack.

Number Of Ingredients 8

4 medium russet potatoes (pre-baked)
1/4 teaspoon salt
1/4 teaspoon ground black pepper
4 slices cooked and crumbled bacon (grease reserved)
1 tablespoon olive oil (only if not using bacon grease)
1/2 cup cheddar cheese (shredded)
3 green onions (sliced)
1/4 cup sour cream

Steps:

  • Cook the potatoes using your preferred method. See methods in post.
  • Half the potatoes lengthwise. Scoop out the center of the potato to leave 1/4" of flesh around the skin.
  • Coat the potatoes with the reserved bacon grease or olive oil. Sprinkle with salt and pepper.
  • Add the potatoes in a single layer to the air fryer basket. Cook for 5 minutes at 400 degrees F. Open the basket and add the cheese and bacon crumbles to the center of each potato. Cook for 2 more minutes, until the cheese is melted.
  • Transfer the potato skins to a plate and top with green onions and sour cream. Serve right away with additional toppings, if desired.

2 medium russet potatoes
olive oil cooking spray
4 tablespoons vegan shredded Cheddar-style cheese (such as Daiya®)
4 tablespoons diced tomatoes with green chile peppers (such as RO*TEL®)
4 tablespoons prepared textured vegetable protein (TVP)

Steps:

  • Wash potatoes and puncture holes in the skin with a fork.
  • Cook potatoes in the microwave for 5 minutes on each side. Remove from microwave and cut in half lengthwise. Using a small spoon, scoop out the flesh, leaving 1/4 inch of potato flesh in the shell.
  • Preheat the air fryer to 350 degrees F (175 degrees C). Spritz the inside of the potato shells with olive oil cooking spray. Set potatoes in the air fryer basket, hollowed-out side up.
  • Air fry until edges start to crisp, about 5 minutes. Remove and fill each potato skin with about 1 tablespoon vegan cheese. Return to the air fryer basket and cook until cheese is melted, 5 to 7 minutes.
  • Top cooked potato skins with 1 tablespoon diced tomatoes and 1 tablespoon textured vegetable protein.
