Air fryers circulate hot air around the food which creates a crisp and crunchy exterior and keeps the interior tender and juicy. It's hard to beat the fresh, sweet taste of summer corn, and it's even harder to beat the ease and results of this preparation! If you enjoy fuss-free meal preps, this recipe was made for you. This is a great method for making your basic corn on the cob, and you can upgrade it with different toppings and butters. To prepare this quick and easy side dish, rub ears of corn with olive oil and sprinkle with salt. Place corn in the basket of your preheated air fryer and cook until charred and tender. Rub evenly with butter, sprinkle with chives, pepper, crumbled cheese, or other preferred toppings, and serve hot.

4 ears fresh yellow corn, husked, silks removed
2 teaspoons olive oil
1/2 teaspoon kosher salt
1/4 cup salted butter, softened
2 tablespoons finely chopped fresh chives
1/4 teaspoon black pepper

Steps:

  • Rub corn with olive oil. Sprinkle evenly with salt. Preheat a 6.3-quart air fryer to 400°F for 5 minutes. Place corn in air fryer basket, and cook until charred and tender, about 14 minutes, turning once halfway through cook time. Rub evenly with butter, and sprinkle with chives and pepper. Serve hot.

2 teaspoons crumbled cotija cheese
1 teaspoon lime juice
¼ teaspoon chili powder
2 ears corn, shucked and halved
4 sprigs fresh cilantro, or to taste

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Mix mayonnaise, cotija cheese, lime juice, and chili powder in a shallow dish.
  • Roll each piece of corn in the mayonnaise mixture until all sides are covered.
  • Place all 4 pieces of the corn in the basket of the air fryer and cook for 8 minutes. Garnish with cilantro.
