1 egg yolk
1 teaspoon Dijon mustard
1 cup extra-virgin olive oil
½ clove garlic, minced
lemon juice to taste
salt and pepper to taste

Steps:

  • In a bowl, whisk together the Dijon mustard and egg yolk. Slowly pour in olive oil while whisking rapidly. After all the olive oil is in the mixture, blend in the garlic and lemon juice. Season with salt and pepper.

3 garlic cloves, chopped
1 large egg
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1 pinch fresh ground black pepper
1/2 cup extra virgin olive oil
1 tablespoon parsley sprig (optional)

Steps:

  • Combine garlic, eggs, lemon juice, parsley (optional), salt and pepper in a good processor and puree.
  • With processor running, slowly add olive oil in a continuous stream until mixture has formed a thick emulsion.
  • Chill.
