Delicious recipe of my mom's! The secret ingredient makes this potato salad different from all the rest!

10 eggs
12 medium white potatoes with skin
1 bunch green onions, chopped
1 (14 ounce) can sweetened condensed milk
1?½ cups mayonnaise
1 tablespoon chopped fresh parsley, for garnish

Steps:

  • Place eggs in a saucepan and cover with water. Bring to a boil and cook for 10 minutes. Remove eggs with a slotted spoon and set aside to cool. Add whole potatoes to the water and boil until a knife is easily inserted, but they are not too soft. Drain and cool.
  • Peel and chop the eggs and place them in a large serving bowl. Stir in the green onions. When the potatoes have cooled, peel and chop then add them to the bowl. Pour in the sweetened condensed milk and stir in the mayonnaise. Sprinkle parley over the top. Chill until serving. This is best served chilled.

This southern potato salad is great for barbecues and picnics or serves as a side item with your next dinner meal. This recipe is really easy to prepare.

Number Of Ingredients 9

3 pounds boiled potatoes
4 hard-boiled eggs, chopped
4 tablespoons of mayonnaise or miracle whip, then add to taste
2 tablespoons of sweet pickle relish, then add to taste
1 teaspoon of yellow mustard, then add to taste
1/4 teaspoon salt, then add to taste
1/4 teaspoon pepper, add to taste to taste
paprika sprinkled over the top of salad
parsley sprinkled over the top of salad

Steps:

  • Rinse potatoes thoroughly under running water. Place potatoes into a large pot and cover with at least two inches of cold water. Bring water to a rolling boil and cook potatoes until tender. Don't allow the water to boil out. Once potatoes are done remove from heat, pour out the water and allow to cool. Go ahead and clean your large pot because you will use it later to mix up your potato-salad.
  • Place eggs into a small boiling pot and add cold water. Cook eggs on medium-high heat until done. Remove from heat, add cold water and allow to cool before chopping.
  • Now that the potatoes have cooled peel them and mash them up one at a time into your large pot. Add chopped eggs, mayonnaise, yellow mustard, sweet pickle relish, salt, and pepper. Mix all of the ingredients thoroughly. Start with the exact measurements and adjust to your desired taste.
