Yield 4 servings (serving size: 3 ounces pork)

Number Of Ingredients 7

1 (1-pound) pork tenderloin, trimmed
1 (7-ounce) can chipotle chiles in adobo sauce
½ cup finely chopped green bell pepper
½ cup chopped bottled roasted red bell peppers
2 tablespoons fresh Parmesan cheese
1 tablespoon brown sugar
4 garlic cloves, minced

Steps:

  • Preheat oven to 375°.
  • Slice pork lengthwise, cutting to, but not through, other side. Open halves, laying pork flat. Slice each half lengthwise, cutting to, but not through, other side; open flat. Place plastic wrap over pork; pound to an even thickness using a meat mallet or rolling pin.
  • Remove 1 chile and 1 teaspoon sauce from can; reserve remaining chiles and sauce for another use. Finely chop chile. Combine chopped chile, 1 teaspoon sauce, and remaining ingredients in a small mixing bowl. Spread chile mixture over pork, leaving a 1/2-inch border around edges. Roll up pork, jelly roll fashion, starting with short side. Secure at 2-inch intervals with twine. Place pork on a baking sheet.
  • Bake at 375° for 30 minutes or until a meat thermometer registers 160°. Cover lightly with foil; let stand 5 minutes. Remove twine, and cut into 1/2-inch-thick slices.

This is a very delicious, moist and flavorful, easy pork loin from the Goya recipe site. I serve it with yellow rice and beans.

2 tablespoons chili powder
1 tablespoon abobo seasoning with pepper
1 teaspoon cumin, ground, optional at my house
1 teaspoon dark brown sugar
1/8 teaspoon cinnamon, ground, optional at my house
2 tablespoons extra virgin olive oil
2 lbs boneless pork loin roast

Steps:

  • Preheat oven to 450 degrees.
  • In a small bowl mix together the chili powder, adobo, cumin, dark brown sugar and cinnamon until well combined.
  • Stir in olive oil until completely saturated.
  • Using paper towels, pat pork loin dry.
  • Rub pork all over with adobo mixture.
  • Transfer pork to foil lined roasting pan.
  • Cook until pork is dark golden brown and insta-read thermometer registers 145 degrees when inserted into center of loin, about 35 minutes.
  • Tramsfer pork to serving platter.
  • Tent with foil to keep warm.
  • Let rest 10-15 minutes before slicing.
  • Serve with accumulated juices.

  • "Place all the Adobo ingredients in a food processor and blend until you have a loose paste. DO NOT skimp on the seasoning. Blot the pork loin dry and place it in the middle of a deep baking pan. Pour the adobo on top of the pork loin and spread with a spatula. Poking holes all over the pork loin with a sharp knife and add adobo into the holes is optional. Wrap the pork loin with slices of bacon. Just drape, or take the time to make a nice basket weave. I weave on a cutting board and transport the result with a large spatula and tuck the ends under the roast. Roast the pork loin in a deep baking pan at 500° F for 15 minutes. After 15 minutes, lower the temperature of the oven to 350° F. Allow the pork to cook until a meat thermometer inserted reads 140°. Once it reads 140° (about 1hr 15 minutes) remove the roast from the oven and tent it with aluminum foil while it rests for 15 minutes. Bind the gravy with a little corn starch and serve hot."
