You can make the dough for these tender, buttery rolls the night before.

1/2 cup warm water
1 (1/4-oz.) envelope active dry yeast
1 teaspoon granulated sugar
1 cup warm (110°F) milk
1/4 cup honey
1 large egg, beaten
1/2 cup (4 oz.) plus 3 Tbsp. melted salted butter, divided
1 1/2 teaspoons kosher salt
4 cups (about 17 oz.) all-purpose flour

Steps:

  • Combine warm water, yeast, and sugar in a small bowl; let stand until mixture bubbles, about 5 minutes.
  • Beat warm milk, honey, egg, and 1/2 cup of the melted butter with a heavy-duty electric stand mixer on medium speed until well blended. Add yeast mixture and salt; beat until combined. With mixer running, gradually add flour until well combined.
  • Transfer dough to a bowl coated with cooking spray. Cover with plastic wrap, and chill 8 hours or overnight.
  • Lightly grease 2 (12-cup) muffin pans. Place chilled dough on a lightly floured surface; punch down dough into an 8-inch circle. Cut dough into quarters. Cut each quarter into 4 wedges; roll each wedge into an 8-inch-long rope. Starting at end, roll each rope into a spiral shape, and place in a prepared muffin cup. Cover pans with plastic wrap; let rise in a warm (80°F to 85°F) place, free from drafts, 45 minutes.
  • Preheat oven to 400°F. Brush rolls with 2 tablespoons of the melted butter; bake in preheated oven until golden brown, 15 to 18 minutes. Cool on a wire rack. Brush with remaining 1 tablespoon melted butter.

3/4 cup warm water
2 1/4 teaspoons Yeast active dry yeast
1 teaspoon sea salt
1 1/2 tablespoons Granulated sugar
1 tablespoon vegetable shortening
1/2 cup warm milk
3 cups bread flour

Steps:

  • "In a large bowl, add warm water and slowly stir in the yeast until fully dissolved. Add salt, sugar, shortening and milk, and stir until sugar and salt are dissolved. Mix in first 2 cups of flour. Begin adding more flour a spoon at a time until the dough balls up and stops sticking to the bowl. Turn dough out onto floured surface and knead. Add flour a spoonful at a time until the dough is soft and smooth, and does not stick to your fingers. Butter a large bowl, and place the dough into the bowl, turning to ensure the top is coated slightly with butter. Cover and leave in a warm place for 1 hour. Punch down the dough and turn out onto floured surface again, and kneed for a minute or two. Preheat oven to 375F. Form dough into the shape of a loaf and place into a buttered loaf pan. Cover and let rise in a warm place for 30 minutes longer. Bake until golden brown, about 40 to 45 minutes, depending on the oven and the type of loaf pan you are using. You can add sesame or caraway seeds to the top of this loaf simply by whisking one egg white with a teaspoon of water, brushing the top of the loaf and sprinkling it with the seeds. The egg white will also cause the top of the loaf to shine a little. You can use sourdough starter in this recipe very easily. Reduce the warm water to 1/4 cup, reduce the flour to 2 1/4 cups, and add 1 cup of sourdough starter. Dissolve the yeast in the 1/4 cup of water, then add the starter at the same time you are adding the milk, sugar salt and shortening. Using starter may require a little more time on both rises."
