Fall favorite acorn squash gets a Mexican twist with a spicy-as-you-like-it turkey and veggie stuffing.

3 acorn squash (1 1/4 pounds each), halved and seeded
Nonstick cooking spray
¾ teaspoon salt
¼ teaspoon black pepper
2 tablespoons canola oil
12 ounces 93%-lean ground turkey
¾ cup chopped green sweet pepper
½ cup chopped onion
1?¼ cups cubed yellow summer squash
1 (14.5 ounce) can no-salt-added diced tomatoes, drained
1 teaspoon salt-free fiesta lime seasoning, such as Mrs. Dash brand
¼ teaspoon crushed red pepper
6 tablespoons crumbled queso fresco
3 tablespoons snipped fresh cilantro

Steps:

  • Preheat oven to 400 degrees F. Pour 1/2 inch water into a large roasting pan; add acorn squash, cut sides down. Bake 30 minutes. Turn squash halves cut sides up; coat with cooking spray and sprinkle with 1/4 tsp. of the salt and the pepper. Bake 20 to 25 minutes more or until tender.
  • Meanwhile, in a 10-inch nonstick skillet heat 1 Tbsp. of the oil over medium. Add ground turkey; cook until browned. Remove turkey.
  • In skillet heat remaining 1 Tbsp. oil over medium. Add green pepper and onion; cook 5 to 7 minutes or until onion is tender, stirring occasionally. Add summer squash; cook and stir 3 minutes or just until squash is tender. Stir in turkey, remaining 1/2 tsp. salt, and the next three ingredients (through crushed red pepper); heat through.
  • Spoon turkey mixture into squash cavities. Bake 10 minutes. Top with queso fresco and cilantro.

This acorn squash recipe is no fuss, no oil, and 100 percent delicious. Chef's Note: This stuffed recipe makes enough filling for about 6 acorn squash halves (3 whole squash) but is tasty enough to eat on its own. 3 acorn squash (see note)
½ cup quinoa
½ cup diced onion
1½ cups diced mushrooms
1 cup diced celery
½ cup finely chopped cabbage
½ teaspoon sea salt
freshly ground black pepper

Steps:

  • Preheat the oven to 375°F. Halve the squash laterally through the center (rather than through the stem), and scoop out the seeds.
  • Place the squash in an 8×8-inch baking dish with the cut side down, and fill the baking dish with ¼ inch of water.
  • Loosely cover with foil and bake until the squash and edible skin are totally soft, about 35 minutes. Set aside.
  • Combine the quinoa and 1 cup of water in a small pot and bring to a boil over high heat. Reduce the heat to low, cover, and simmer for 15 to 20 minutes. Remove the pot from the heat and let cool; then fluff the quinoa with a fork.
  • Preheat a large skillet over medium heat for about 1 minute. Add the onions and sauté for about 7 minutes, stirring often, or until the onions turn nice and brown, which brings out the sweetness and gives the dish a nice deep flavor. Add water 1 to 2 tablespoons at a time, to keep the onions from sticking to the pan.
  • Add the mushrooms, celery, cabbage, salt, and pepper to taste, and cook for 5 more minutes, stirring occasionally.
  • Add the vegetable mixture to the quinoa and stir together.
  • Fill each of the cooked squash halves with the quinoa mixture, packing them firmly to fit as much of the mixture into each half as possible.

It smells absolutely wonderful while it's baking. I usually make it using just one squash, then serve the leftover onion, pepper and celery mixture over baked potatoes at another meal.
