CORN PONE RECIPE: HOW TO MAKE IT - TASTE OF HOME

Corn Pone Recipe: How to Make It - Taste of Home image

My husband's grandmother gave me this corn pone recipe years ago. She always made it with bacon drippings, which is heavenly, but if you're trying to be a little more health-conscious, you can use canola oil or a combination of the two. I cook it until it's crisp almost all the way through. It's delicious hot, warm or cold. —Tina Quiggle, LaGrange, Georgia

MARYLAND CRAB BALLS - EASTERN SHORE RECIPES
Print Recipe This post may contain affiliate links so I earn a commission. Please read my disclosure for more info. Maryland Crab balls are small crab cakes that can be seen at Chesapeake Bay-themed events and fairs all summer long. They are the perfect size to pass around and enjoy. Crab ball recipes are distinctive to each family, and in ours, there is often debate about which method is superior. While some people like adding a little sweetness and flavor with minced red bell pepper and scallion, I prefer the more classic recipe of adding Ritz crackers. Every bite is a celebration! The trick to these festive little appetizers, whether you're making a dozen or a hundred, is the pre-measured mix! These scrumptious Maryland crab balls will be the hit of the party, whether it's a holiday, housewarming, cocktail, or football party. Let's get started! What you'll need to make this Maryland Crab Balls recipe These baked Maryland crab balls are a simple and enjoyable dish to prepare. The recipe is entertaining because it may be served as an appetizer or a light meal. Crabmeat Egg Ritz crackers Mustard Lemon juice Parsley Old Bay Seasoning Worchestershire sauce INGREDIENTS DIRECTIONS 1 lb Crabmeat, Back Fin1 each egg; beaten1 cup Ritz crackers; crushed1 tsp yellow mustard2 tbsp Lemon juice; fresh2 tbsp Parsley; fresh, chopped1 tsp Old Bay Seasoning1 tbsp Worcestershire sauce Place crabmeat in a mixing bowl, picking any stray shell fragments out. Add crushed crackers, Old Bay Seasoning & parsley to the crab. In a separate bowl, combine egg, mustard, lemon juice and Worcestershire sauce. Whip with a whisk until smooth. Pour egg mixture over the crabmeat and crackers and gently mix careful not to break up large lumps of crabmeat. Mold into golfball-sized balls and place on a cookie sheet. Bake @ 350 degrees for 30 minutes. Drizzle w/ melted butter and allow to cool, serving w/ saltine crackers For more tasty Chesapeake Bay recipes click here!

SHIRO (GROUND-CHICKPEA STEW) RECIPE - NYT COOKING
Shiro is a simple, silky ground chickpea stew that takes little time and effort to bring together. In Eritrea and Ethiopia, it’s a most beloved and important dish — a vital source of flavor and protein. In those countries, it’s made with widely available shiro powder, a mixture of ground chickpeas, garlic, onion and spices. This version, based on Ghennet Tesfamicael’s recipe published in “In Bibi’s Kitchen,” by Hawa Hassan with Julia Turshen, cleverly suggests replacing shiro powder with chickpea flour and a homemade blend of berbere spice. You’ll be transported as your kitchen fills with the aroma of toasting warm spices and ground chilies. Traditionally, shiro is served alongside cooked greens and injera or other flatbreads. But it’s also delicious spread in a thick layer atop sourdough toast rubbed with garlic and finished with slices of tomato and a fried egg.

COFFEE-RUBBED GRILLED FISH RECIPE - NYT COOKING
The final days of December for African-Americans mean playing games of bid whist and spades, and cultivating joy through seasonal dishes. For Rashad Frazier and his family in Portland, Ore., Kwanzaa is all about the food, Nguzo Saba (the seven principles) and honoring members of their families who have made their lives bright. Mr. Frazier is a personal chef and an avid outdoorsman; this rub is his go-to for highlighting fresh-caught fish, which he is serving for the holiday.

  • Oil the grill grates or pan. Place the fish on the hot, greased grates, and cover, if using a gas grill. Grill, turning once, until skin is browned and crisp and the flesh is opaque, 5 to 6 minutes per side. The crisped skin should naturally release from the grate when turning and removing the fish. If it doesn’t, let it sit until it does. If it’s still stuck, carefully pry the skin off the grate with a spatula. Season to taste with salt, and serve right away with lime wedges.
