Multigrain Chocolate Chip Cookies Recipe | Bon Appétit image

Yes, there are multi ingredients in these multigrain cookies, but that’s what makes them so over the top. This recipe is from Zoe Kanan at The Freehand hotel in New York.

Provided by Zoe Kanan

Yield Makes 20

Number Of Ingredients 18

1½ cups all-purpose flour
? cup whole wheat flour
1½ tsp. baking powder
1½ tsp. kosher salt
½ tsp. baking soda
8 oz. bittersweet chocolate, chopped
1 cup old-fashioned oats
? cup raw pumpkin seeds (pepitas) and/or sunflower seeds
¾ cup polenta and/or quinoa
3 Tbsp. millet, poppy seeds, and/or flaxseed
1 cup (2 sticks) unsalted butter, room temperature
1 cup (packed) dark brown sugar
½ cup granulated sugar
¼ cup powdered sugar
2 tsp. molasses
1 large egg
4 large egg yolks
1½ tsp. vanilla extract

Steps:

  • Whisk all-purpose flour, whole wheat flour, baking powder, salt, and baking soda in a medium bowl.
  • Mix chocolate, oats, pumpkin seeds, polenta, and millet in another medium bowl.
  • Cream butter, brown sugar, granulated sugar, powdered sugar, and molasses in the bowl of a stand mixer fitted with the paddle attachment on medium-high speed, scraping down sides as needed, until mixture is the color of light mocha and very fluffy, 3–4 minutes.
  • Reduce mixer speed to medium. Add egg, then egg yolks one at a time, waiting for each to incorporate before adding the next. Beat in vanilla, then scrape down bowl again.
  • Reduce mixer speed to low and slowly beat in dry ingredients until just combined and no visible white flour remains. Fold in chocolate mixture with a spatula until well combined. Cover dough with plastic and chill at least 2 hours.
  • Place racks in upper and bottom thirds of oven; preheat to 350°. Line 2 rimmed baking sheets with parchment paper. Using a ¼-cup scoop or dry measuring cup, portion dough into ¼-cup balls (about 2.5 oz. each). Arrange evenly on prepared sheets.
  • Bake cookies, rotating pans once top to bottom and front to back, until golden brown on top and surface just begins to look matte, 14–18 minutes. Let cool slightly, then transfer to a wire rack and let cool completely. Repeat with remaining dough and fresh parchment.
  • Do Ahead: Cookie dough can be made 3 days ahead. Cover and chill.

No Bake Strawberry Cheesecake Bars (Easy Recipe!) | Just A ... image

No-bake strawberry cheesecake bars are cool, creamy, and easy to make with fresh strawberries, cream cheese, and Cool Whip.

Provided by @MakeItYours

Number Of Ingredients 9

2 (8 oz.) packages cream cheese, room temperature
1 ¼ cups strawberries, chopped
1 cup sugar
1 tsp. vanilla extract
1 cup Cool Whip, thawed
additional fresh strawberries, optional garnish
1 ½ cups graham crackers crumbs
6 Tablespoons butter, melted
¼ cup sugar

Steps:

  • Line an 8-inch square baking pan with parchment paper and set it aside.
  • In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Press into the bottom of the baking pan in an even layer. Refrigerate for 1 hour.
  • While the crust chills, prepare the cheesecake filling. Add strawberries and sugar to your blender or food processor; blend to get the strawberries chopped up nicely. Add cream cheese and vanilla. Blend until smooth and well combined. Transfer to a large mixing bowl and fold in the cool whip.
  • Pour the strawberry cheesecake filling over the graham cracker crust and smooth with a spatula.
  • Cover with plastic wrap and place in the freezer for at least 4 hours (or overnight). Use the parchment paper to lift the bars from the pan and place on a cutting board. Slice into bars and top with fresh strawberries, if desired. Serve immediately for a more frozen treat or allow them to soften at room temperature for 30 minutes if you prefer.
