This is great served alongside a couple of other small plates for people to dip into.

400 ml organic vegetable stock
150 g quick-cook polenta plus 2 tablespoons for dusting
40 g Parmesan cheese plus extra to serve
2 teaspoons dried oregano
olive oil
50 g pine nuts
½ a clove of garlic
50 g Parmesan cheese
1 bunch of fresh basil
extra virgin olive oil
2 tablespoons white wine vinegar

Steps:

    1. Bring the stock to the boil and slowly whisk in the polenta, stirring constantly. Add a pinch of sea salt and, after a few minutes, once thickened, finely grate in the Parmesan and stir in the oregano.
    2. Pour into a greased and lined 20cm square tin and pop in the fridge to chill and firm up, about 1 hour.
    3. For the dip, toast the pine nuts in a dry pan, then tip into a food processor. Crush in the garlic and grate in the Parmesan, measure in 60ml of extra virgin olive oil, then add the rest of the ingredients and pulse until combined but still coarse. Season to taste, and scrape into a serving bowl.
    4. Preheat oven to 220ºC/425ºF/gas 7.
    5. Cut the chilled polenta into chips and brush with 2 tablespoons of olive oil. Dust with the extra polenta. Arrange on a greased baking tray in a single layer and bake for 30 minutes, or until crisp and golden.
    6. Serve the hot polenta chips with some extra Parmesan grated on top, and the pesto dip on the side.

Get three of your 5-a-day in just one portion of these epic Mexican-inspired fish tacos.

100 g plain wholemeal flour
2 ripe kiwi fruit
4 spring onions
1 fresh jalapeño or green chilli
1 bunch of fresh coriander (30g)
2 limes
Tabasco chipotle sauce
¼ of a small red cabbage (150g)
1 tablespoon red wine vinegar
½ an orange
1 red or yellow pepper
2 x 120g fillets of firm white fish, such as haddock, skin on, scaled and pin-boned, from sustainable sources
olive oil
2 tablespoons natural yoghurt

Steps:

    1. In a bowl, mix the flour and a pinch of sea salt with 60ml of water to form a dough. Knead for a couple of minutes, then put aside.
    2. Peel the kiwi fruit, cut in half and put into a large dry non-stick frying pan on a medium heat with the green halves of the spring onions and the deseeded chilli.
    3. Lightly scald it all, turning every now and again, then place in a blender with half the coriander, the juice of 1 lime and a few shakes of chipotle Tabasco. Blitz until smooth, then taste and season to perfection.
    4. Very finely slice the red cabbage, ideally on a mandolin (use the guard!), scrunch with the remaining coriander leaves and the vinegar and orange juice, then season to perfection.
    5. To make your tacos, divide the dough into four balls and roll out each one thinly. Cook each through in a non-stick pan for just 1 minute on each side until soft, turning when you see bubbles. Cover with a tea towel to keep warm.
    6. Slice up the whites of the spring onions. Deseed the pepper and cut into 1cm dice. Slice the fish into 2cm strips, then toss with the spring onion, pepper and 1 tablespoon of oil.
    7. Return the pan you used for your tacos to a high heat and cook the fish mixture for around 4 minutes, or until the fish is cooked through and lightly golden.
    8. Divide the yoghurt, fish and veg between your warm tacos. Serve with the dressed red cabbage, that killer salsa and lime wedges for squeezing over, then devour!

  • 1. Make the Dough: In a large mixing bowl, combine the water and active starter, mixing well with your hands. Add half the flour (eyeballed is fine) and mix well; a few lumps are OK. It will be the consistency of pancake batter. Cover and let sit at room temperature for 30 minutes. 2. After 30 minutes, add the remaining flour and salt. Mix until uniform using your hands. The dough will be quite sticky at this stage; bring it together in the center of the bowl, using a bowl scraper. Cover and leave to rest for 1 hour at room temperature. 3. After the first hour, stretch and fold the dough for 1 minute in the bowl using a bowl scraper or your hands, turning the bowl as you go so it folds from a different direction each time. Cover and rest 1 hour. Repeat this stretching and resting process three more times, for a total of four sets of folds. 4. After the last set of folds, cover the dough in the bowl and transfer to the fridge to ferment overnight, at least 10 hours and up to 14 hours. 5. In the morning, generously oil a 2-inch-deep, 9-by-13-inch metal pan with ? cup of olive oil, spreading it evenly across the bottom and sides of the pan. Gently transfer the dough to the pan using a bowl scraper and fold it over itself once, then, using your fingers, gently press it into a rectangle shape, coming to about 2 inches from the edges of the pan. The oil should pool nicely in the corners and little divots on top of the dough. Cover and place in a warm spot for 1 hour. 6. After 1 hour, you should see some bubbles on top and the dough should have increased its volume by about half. Gently press the dough out further so it reaches the corners of the pan and, using your hands, dimple the surface of the dough. Finish it with a light drizzle of olive oil. Cover, place in a warm spot and proof for 1 hour, or until you see more bubbles forming on the surface. 7. With a rack in the center, preheat the oven to 450?F. When hot, transfer the focaccia to the oven. Bake until golden and bubbly, browning deeply in a few spots, 30 to 40 minutes. 8. Make the Syrup: Meanwhile, in a small saucepan, combine the water with the honey and bring to a simmer over medium-high heat. Turn off the heat and leave in the pot in a warm spot. 9. When the focaccia is done, carefully remove it from the pan using tongs or a spatula and transfer to a cooling rack to continue cooling. With a pastry brush, liberally paint the honey syrup all over the focaccia, giving it two coats. Sprinkle liberally with flaky salt. Cool another 20 minutes before slicing.
