2 pounds ground beef
1 envelope taco seasoning
1-1/2 cups water
1 can (16 ounces) mild chili beans, undrained
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (14-1/2 ounces) stewed tomatoes
1 can (10 ounces) diced tomato with green chiles
1 can (4 ounces) chopped green chiles, optional
1 envelope ranch salad dressing mix

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink, breaking it into crumbles; drain. Add taco seasoning and mix well. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until heated through, stirring occasionally.

I find this to be a crowd pleaser. Over the holidays we have an open house and I make soup. I usually make 2 if not 3 different ones. But taco soup is always on the menu. You can substitute chicken in place of the hamburger.

1 pound(s) lean hamburger
1 small onion chopped
2 can(s) 12 oz pinto beans undrained
1 can(s) 12 oz red kidney beans undrained
1 can(s) 12 oz chili beans undrained
1 can(s) 12 oz corn undrained
1 can(s) 12 oz beef broth
1 can(s) 12 oz diced mexican tomatoes undrained
1 package(s) taco seasoning
1 can(s) 8 oz sliced black olives
2 cup(s) grated cheddar or white mexican cheese
1 cup(s) sour cream, lite
1 - bag corn chips

Steps:

  • In a stock pot brown your hamburger and drain. I believe is washing as few dishes as possible. That's why I brown my hamburger in the stock pot and not a skillet! =)
  • Once you have your drained hamburger back in the stock pot add your diced onion and saute just a little bit to get the onion cooked. Then add your beef broth and taco seasoning.
  • Mix all remaining ingredients in (except cheese, sour cream & chips) and simmer for the afternoon or cook on medium for 1 hour.
  • The smell will bring them in the kitchen. To serve dish up your piping hot soup and top with grated cheese and a dollup of sour cream with chips on the side!
