BOSTON BAKED BEANS RECIPE | ALLRECIPES

Boston Baked Beans Recipe | Allrecipes image

A wonderful old-fashioned baked bean flavor. This recipe has served by family for 29 years and originally came from my mother-in-law. It tastes great served with fresh cornbread or biscuits and honey. Although you need to allow time for soaking and simmering the beans, this recipe is still quite easy.

Total Time 5 hours 0 minutes

Prep Time 30 minutes

Cook Time 4 hours 0 minutes

Yield 6 servings

Number Of Ingredients 10

2 cups navy beans
½ pound bacon
1 onion, finely diced
3 tablespoons molasses
2 teaspoons salt
¼ teaspoon ground black pepper
¼ teaspoon dry mustard
½ cup ketchup
1 tablespoon Worcestershire sauce
¼ cup brown sugar

Steps:

  • Soak beans overnight in cold water. Simmer the beans in the same water until tender, approximately 1 to 2 hours. Drain and reserve the liquid.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Arrange the beans in a 2 quart bean pot or casserole dish by placing a portion of the beans in the bottom of dish, and layering them with bacon and onion.
  • In a saucepan, combine molasses, salt, pepper, dry mustard, ketchup, Worcestershire sauce and brown sugar. Bring the mixture to a boil and pour over beans. Pour in just enough of the reserved bean water to cover the beans. Cover the dish with a lid or aluminum foil.
  • Bake for 3 to 4 hours in the preheated oven, until beans are tender. Remove the lid about halfway through cooking, and add more liquid if necessary to prevent the beans from getting too dry.

VERY VERSATILE BAKED BEANS WITH CABBAGE RECIPE | EPICURIOUS
Any kind of medium or large dried bean works great here. Starchier varieties—like Italian gigante beans or cannellinis—will produce a creamier broth, and more vegetal ones—anything lima-like—will produce a thinner, slightly stew-ier broth. Black beans, kidneys, and pintos are all good. The onions and cabbage melt into the dish, providing a blanket of sweet richness. Embrace the versatility of this dish by playing around with the vegetable make-up by adding cubed winter squash, swapping chicories for the cabbage, using stock in place of the water, or stirring in blanched hearty greens or spinach at the end, for example. And serving options are similarly open-ended; see below for a few favorites.

HOMEMADE BAKED BEANS RECIPE - SOUTHERN LIVING
A dish of baked beans is a welcome addition to any backyard barbecue, family reunion potluck, or football tailgate. Even though you may not have time to start from dried beans, this recipe allows you to turn out a savory and tasty dish based on canned beans.Start by frying up some bacon (because we are firm believers that most things taste better with bacon) and sautéing an onion. Make a sweet and spicy sauce using brown sugar, ketchup, Worcestershire sauce, dry mustard, and your choice of sorghum syrup or molasses – two of the South's favorite sweeteners. Stir the sauce and onions into the beans, top with bacon and bake. Make this the night before and omit topping with bacon until you are ready to put the dish in the oven. Need ideas for leftover baked beans? Serve on top of pulled pork and slaw on a bun, stir in leftover chicken, ground beef, or sausage and reheat, or add to a pot of stew for extra taste and texture.
