Yummy combination of beef, pork, and sausage topped with caramelized tomato soup. My favorite meatloaf recipe by far. Worth every ingredient!

Yield 1 9x5-inch meat loaf

1 large onion, chopped
2 carrots, chopped
1 cup beef broth
2 eggs
½ cup bread crumbs
2 tablespoons minced fresh basil
½ teaspoon salt
½ teaspoon ground black pepper
1 pound ground turkey
¾ pound ground beef
½ pound ground pork sausage
½ cup condensed tomato soup
1 tablespoon balsamic vinegar
½ teaspoon Dijon mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Oil a 9x5-inch loaf pan.
  • Place the onion and carrots into a saucepan, and pour in the beef broth. Bring to a boil over medium heat, and reduce heat to a simmer; cook, stirring often, until the vegetables are tender, about 8 minutes. Set the veggies and broth aside.
  • In a large bowl, beat the eggs, and stir in bread crumbs, basil, salt, and black pepper. Allow the mixture to stand for 5 minutes to moisten the crumbs, and lightly mix in the turkey, beef, and pork sausage. Mix in the cooked onions, carrots, and beef broth. Place the mixture into the prepared loaf pan. In a bowl, mix the tomato soup, balsamic vinegar, and Dijon mustard together, and spread the mixture over the meat loaf.
  • Bake until the loaf is no longer pink in the center and an instant-read meat thermometer reads at least 160 degrees F (70 degrees C), about 1 1/2 hours.

You have to try this recipe!! I wasn't fond of meatloaf till I tried this recipe. I've made it my own by changing a few things.

Number Of Ingredients 10

1 small onion
2 garlic cloves, minced
1 teaspoon thyme
1/3 cup milk
1 egg
1/4 cup ketchup
1/2 cup panko breadcrumbs
1/2 lb ground beef
1/2 lb ground pork
1/2 lb ground turkey

Steps:

  • Saute onion till softened. Then add the garlic and thyme.
  • In a separate bowl, combine the meats until thoroughly mixed. Add breadcrumbs and onion mixture. Mix well.
  • In a small bowl, combine the milk, egg, and ketchup. Add to the meat mixture. Mix well.
  • Shape into a loaf and place in a meatloaf pan.
  • Bake at 350 degrees for 90 minutes or until the internal temp is 180 degrees.

I love cheese and I have never seen a meatloaf recipe that has cheese just seeping out, and the different meats make it wonderful! Oh, it's good. My hubby raved about this one. This is a great meatloaf. I'm surprised it hasn't already been posted yet. The only thing I like better than meat loaf is meatloaf sandwiches, and this meatloaf is even better the next day; sliced between whole wheat bread, topped with a slice of cheese, and lots of mayo. Note: I omitted the veal and adjusted the amount of beef and pork to compensate--it was still great.
