Banana Bread Recipe for 3 Bananas - Beat Bake Eat image

This easy banana bread recipe made with 3 bananas and oil is moist and delicious. No mixer required, one bowl, and less than 10 minutes prep.

3 overripe bananas, mashed
3/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/3 cup vegetable oil
2 eggs
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 teaspoon baking soda

Steps:

  • Preheat oven to 350°F. Spray a 9x5 inch loaf pan with non-stick cooking spray, or lightly grease with oil, or line with parchment paper and set aside.
  • In a large bowl combine bananas, granulated sugar, cinnamon, and salt.
  • Beat in the oil, eggs, and vanilla extract.
  • Add the flour and baking soda and gently stir until incorporated. DO NOT over mix.
  • Pour the batter into the baking pan.
  • Bake for 30 minutes then remove from the oven and cover loosely with foil. *This prevents the crust from burning.
  • Continue to bake for 15 – 20 minutes until a toothpick inserted in the center comes out clean or mostly clean.
  • Cool in pan 10 minutes then remove to cool completely.

1 boxed cake mix I like yellow, but you can use white, carrot, etc.
2 eggs
3 ripe bananas You can add more if you have more ripe bananas to use up.

Steps:

  • In a large mixing bowl, add dry cake mix, eggs, and smashed bananas.
  • Gently stir together. If you like cinnamon banana bread, add 1 tsp of cinnamon to your batter.
  • Tip: With ANY banana bread recipe, I like to add a yummy crust to the outside of my bread. So before adding the batter to the pan, I like to spray my pan with cooking spray and then sprinkle with brown sugar and cinnamon. THEN, after adding the batter to the pan, I sprinkle the top with more brown sugar and cinnamon. This gives the bread some texture, and creates a yummy sweet crust. I am pretty generous with both sugar and cinnamon and coat the entire bottom of the pan as well as the top. It gives the bread a sort of coffee cake topping.
  • Add to greased bread pan. You can also use a 9×9 pan for a more cake-like treat. OR you can use a muffin pan for banana muffins.
  • Bake at 350 for 45-50 mins in a bread pan. 30 mins in a cake pan. 25 mins in muffin pan. These times vary greatly depending upon your cake mix. You will need to bake until a toothpick comes out clean to make sure the center is completely cooked.

    1. Preheat the oven to 180ºC/350ºF/gas 4.
    2. Lightly grease the bottom and sides of a 1-litre loaf tin with a little butter – I use a folded-up piece of kitchen paper to do this.
    3. In a large bowl, use a wooden spoon to beat the soft butter until creamy.
    4. Crack in the eggs and beat them with the butter. It might look a little lumpy but don’t worry, it will come back together later.
    5. Peel 3 of the bananas, then mash and smush them into the mix with a fork so you’ve got a mixture of smooth and chunky.
    6. Stir in the honey and the apple juice, then use a spatula to fold in the flour and cinnamon, taking care not to over mix.
    7. If using, chop the pecans on a chopping board using the cross-chop method (or you could bash them with a rolling pin), then fold them through the mixture.
    8. Spoon all the mixture into the loaf tin, then peel and slice the remaining banana and poke into the top. Bake for 40 to 50 minutes, or until golden and cooked through. To check if it’s done, stick a cocktail stick or skewer into the middle of the loaf, remove it after 5 seconds and if it comes out clean the loaf’s cooked; if it’s slightly sticky it needs a bit longer.
    9. Allow the loaf to cool slightly, then carefully turn out on to a wire rack to cool completely.
    10. Transfer to a nice plate, cut into slices, then serve. It’s delicious spread with butter, honey, your favourite jam or even chocolate spread. Have fun!
